Cheater Pancake Syrup
I gave this 4 stars because I changed the recipe a bit. I did not have the maple extract, so I added a 1/4 tsp of buttercream bakery emulsion instead. I also doubled the recipe and it was a little bit more than my 24 oz. empty bottle of store-bought stuff. I really like this recipe because I tried another recipe with milk and it was clumpy and had a weird consistency. It didn't stay smooth like this recipe. My kids loved this pancake syrup over homemade pancakes.

South Texas Carne Guisada
This is an awesome base recipe, with many options of substituting or tweaking to your liking. I used very lean, fresh venison instead of sirloin, olive oil, green peppers, and a spice mix by Bolner's (Fiesta brand) called Extra Fancy Carne Guisada Seasoning. I didn't use fresh garlic because I didn't have any. I cooked it all in a cast iron Dutch oven on the stove top, but simmered for about 2 1/2 hours to make the venison more tender. The finished dish was awesome on top of Mexican rice, with homemade flour tortillas, and frijoles a la charra on the side. A Classic Coke in a glass bottle from Mexico made this meal almost emotional for me! It took me back to my abuelitas kitchen table back in the '80's. :) Delicious recipe!!!

Cream Cheese Frosting II
I changed this recipe also, because all I had on hand was one package of cream cheese. I followed the suggestion of one reviewer and used the 8 oz. pkg. of cream cheese, 1/4 cup butter, two cups of confectioners sugar, but added a splash of vanilla, and about 2 tbsp of cocoa. It has a nice consistency, but the taste wasn't "out of this world" good. It was "last minute, had no other choice, used what I had on hand" good.
