Chicken Cordon Bleu I

What a great easy recipe. I decided to use provolone cheese as my husband doesn't care for swiss. I also doctored up the bread crumbs with some spices to give it some flavor. I actually dipped the rolled up chicken in the bread crumbs so it was completely coated and I didn't put cheese on the top to keep it a little crispier. I also bought a packet of hollandaise sauce to serve with it. Delicious, my husband said it is his favorite dish!

Shredded French Dip

This is definitely a keeper. The au jus is fantastic for dipping the sandwiches in. My only problem is I think I left it in the crock pot too long and it got a little more dried out than I'd like but the au jus kept anyone from really noticing. Will definitely make again.

Beef Enchiladas II

French Onion Soup Gratinee

WOW, that's all I can say. This soup is phenomenal. I've never made french onion soup before and this was definitely simple enough for me. I didn't make too many changes except I switched the amounts of chicken and beef broth since that's what I had on hand. I didn't realize how much the onion would cook down so I didn't use the amount called but next time I'll follow the exact amounts. I also will probably only put half the worchester called for but that's personal preference. Overall it was easy and fantastic. Thanks for the great recipe!

Chicken Pot Pie IX

I think this is my new favorite dish. I've made this a couple times and used some of the other's suggestions. I add a little poultry seasoning and garlic powder to the sauce mix. I also add a couple diced potatoes and usually skip the celery since I'm not a huge fan. It is also important to use some beaten egg whites and bake in the oven for 6 or 7 minutes to keep the crust from getting soggy on the bottom. I have frozen some left over pieces and they taste fantastic warmed up. If I could give more than 5 stars I would!

Chicken Marsala

This was fantastic. There weren't any leftovers after I made this. I think the biggest changes I made were to add some garlic powder to the flour dip and I didn't use any butter and only 3T of olive oil. 4T of each is WAY to much I think. Ii also doubled the sauce like some other reviewers recommended. I also used a little extra marsala wine just to taste. Overall it is a definite keeper.

Boston Baked Beans

Oh my goodness these were fantastic. I soaked the beans overnight for about 10 hrs. I only simmered them for an hour. Then I threw everything together in the crockpot. I doubled the sauce and used the reserved water to make sure the beans were all covered. After 8 hrs I removed the lid and cooked 2 more hours to thicken up the sauce. It is quite a process but super easy. They taste way better than canned beans and you get so much more for the price!

Sherry Apple Pork Chops

These were wonderful and very tasty! I followed a lot of other reviewer's and doubled the brown sugar, cinnamon and butter. I also added 2T cornstarch to an additional 1/4 C. sherry to add for the final 10 mins. I think I may have over baked the chops a bit so next time I will cut down the total baking time to only 35 mins. instead of the 50 mins that I did.

Scrumptious Salisbury Steak in Mushroom Gravy

Oh my, these were great! I followed some of the "Most Helpful" reviews. I actually prefer the sauce without the cream of mushroom soup in it otherwise you loose some of the beef flavor a Salisbury steak should have. Just a helpful tip, make sure you really mix your seasons into the ground beef well because as I was taking bites I got more poultry season in parts than others.

Mahogany Chicken Wings

I was a little disappointed when I made these. If I do make them again I will definitely use low sodium soy sauce as I thought these were much to salty for my personal taste. They also turned a lot darker, almost black than the picture shown.

Crustless Cranberry Pie

This was pretty good. I think it may have needed a little more flour as it was more dense and not very fluffy like the picture. I also used the strudel topping that other suggested to help cut down on some of the tart flavoring.

Caramelized Baked Chicken

These didn't really caramelize for me and I tried the recommendation from some of the Most Helpful reviews. I also didn't really care for the taste but that is just my personal preference. It was a little too sweet for me.

Chicken and Bowtie Pasta with Asiago Cream Sauce

Yum, this was fantastic. I loved the combination of different flavors. I stayed pretty true to the recipe. I seasoned my chicken with pepper and garlic salt (should probably use powder next time to cut some of the saltiness from the prosciutto). I substituted 1 C. cream with milk since I didn't have enough cream on hand and it still tasted great. My grocer was out of bow tie so I used penne. Instead of mixing the pasta in I simple poured the chicken mixture over the noodles otherwise the entire 16 oz box would definitely be too much. My only complaint was that it used too many dishes! This will be going into the dinner rotation for sure!

Barbeque Pork Two Ways

This was really good. My only problem with it was that the meat was very fatty. I'm not a very experienced cook so I'm not sure if the shoulder is very fatty or if it was just my cut. The fattiness I think affected the overall flavor but it was still very good. I'm going to see if there would be a better substitute to avoid the fattiness next time.

Beef Bourguignon II

This was fantastic. The meat came out sooo tender it was ridiculous. I followed some recommendations to substitute beef broth for a cup of wine but I think that is a mistake. I think it would be better as is stated in the recipe. Either way it was a hit with my family!

Slow Cooker Italian Beef for Sandwiches

I didn't think this was as good as the reviews led me to believe. My local grocer was out of chuck roast (there was a big sale that weekend) so I bought the rump roast. I think that was my main problem. It was not very flavorful in my opinion but I'm going to try again with a chuck roast and see if I have better luck.

My Best Clam Chowder

This was awesome! I just finished eating it and had to rate it, it was so good. I omitted the celery and forgot to mince an onion so I just added some onion powder instead. I covered the veggies with clam juice rather than water for some more flavor. Other then that I followed the recipe as stated. It was very thick but I like it that way so I didn't thin it out. This was definitely better than a lot of restaurants I've had clam chowder at and super simple to make.

Rich Chocolate Truffle Pie

Wow, this is super rich. I followed directions as is and I think it would have been better if I mixed the semisweet chocolate with some milk chocolate. You only need a tiny sliver to satisfy even a chocoholic. I would also recommend adding some whipped cream and fruit to break up the intense chocolate flavor.

Passion Bars

Oh my these were delicious and super easy to prepare. I followed the recipe exactly except I used reduced fat peanut butter and milk chocolate chips rather than the semisweet since it was what I had on hand. They are so good, especially if you warm them up a little to make the gooey. They were a huge hit.

Sam's Famous Carrot Cake

This was great! I'm not usually a carrot cake person but some family members do like it so I decided to make it for Easter. I followed it pretty much to a T except I omitted the raisins for personal preference. I also used 2 9" round pans and baked for only 30 minutes. It came out so moist, and it was super easy to make. I made a cream cheese frosting with vanilla and almond extract that really complemented the cake. This didn't last long!
