Sage Corn Bread Stuffing

Great recipe, been making it for 20 years,but with a few tweaks was even better. First I baked 1 8.5 oz cornbread and let cool. Then I took 1 loaf french bread (let it sit for a day to get crunchy) and cut it in half tearing it into bite size pieces, and mixed in with the cornbread. Then I sautéed 1 medium onion finely diced and 3 stalks celery finely diced in 1/2c butter and used all the listed seasonings. After the onion and celery were tender I added the sausage and browned it. I finally added all of the meat and veggie mixture to the breads and mixed. Dont worry if the corn bread gets crumbly! Finally I added 1 tsp celery seed and 2 healthy shakes of the sage. Lastly I added about 10 chestnuts that I roasted and chopped and incorporated it into the mix. Now here is the important part: leave it on the counter to "marinate" for 24 hours, stirring every few hours. It all comes together nicely, no chicken broth needed. And no, you wont get sick from it.

Easy Chili I

Has been the family favorite for a while now. I DO add the jalapeno, and I have no clue why people think its too spicy. However if you want a little of the spice but not much, just throw one jalapeno in whole!!

Good Old Fashioned Pancakes

LOVED this recipe. i substituted butter flavored shortening in for the butter and added a splash of vanilla, holy cow!!! It was simply amazing!! Remember for fluffy pancakes: DO NOT OVER MIX!! I'm talking two or three times around in the bowl and you are good. It looks clumpy and there may be patches of flour still needing to be mixed, but the results are amazing every time.

Best Chocolate Chip Cookies

I have never been able to make chocolate chip cookies. They are the one cookie that defeats me, today on Christmas Eve I tried again and was rewarded with perfect scrumptious cookies. Followed the recipe to the letter, although the one change I would make is check on your cookies after 7 minutes. I like mine to be a little soft and 10 minutes was far too long.
