About this Cook
I decided I loved to cook as a young child. My mother was a housewife during the first half of my childhood, and my grandparents lived one house over. If I wasn’t outside with friends, I was in the kitchen with my mother or my grandmother. I grew up making mostly comfort-food style dishes, and decadent desserts. As an adult, I’ve directed my culinary interests to making healthier versions of the foods I grew up loving. Now married, my husband raves to his friends and family about my cooking. He used to eat everything, except for the healthy stuff. Somehow, I've managed to convert his tastes to more "grown-up" ones. Now I can prepare anything I want for him, and no matter how green or healthy it is, he always gobbles it right up!
My favorite things to cook
Growing up in the country, i love, love, love comfort food. Unfortunately, that food can wreck a waistline. So, I come up with my own healthier substituions in most recipes to "lighten" them up without sacrifing taste. I really enjoy making stir-frys and anything that's loaded with vegetables and flavor. Like any country girl, I spend a lot of time baking cookies, muffins, breads, and desserts to pass a Sunday afternoon. What no one realizes is, I've probably found a way to make that sweet treat they're enjoying much more healthy than they'd ever know.
My favorite family cooking traditions
Easter, Thanksgiving, and Christmas are the best times in the kitchen for me and my family. I always help prepare the main dishes as well as whip up some tasty side dishes, too. My mother and I usually make lots of candies and cookies to give as treats for Christmas.

Blueberry Cream Muffins
Best. Muffin. Ever. I read the reviews before I made them, so I replaced 1/2 C. white sugar with light brown sugar. Also used a little more vanilla because I love it. I had some strawberries to use up, so I also added about 1 C. chopped strawberries. I added a crumb topping to mine that Erin recommended. (1C. flour, 1/2C. brown sugar, 6T. butter, and a dash of cinnamon) This will absolutely be the ONLY recipe I use to make fruit muffins from now on. I'm actually deleting the other fruit muffin recipes from my box because this recipe is "it" for me! I plan on making these with only strawberries later in the week, and hopefully raspberries soon since they're my favorite. Thanks KK3! UPDATE: I made these muffins and substituted chopped strawberries in one batch and mini chocolate chips in another batch, and they were so good. This really is the perfect muffin recipe!

Earthquake Cookies
I couldn't believe how easy these cookies were. I also did not chill the dough. I used a devil's food cake mix and added in some mini chocolate chips for my husband. We love these! ;- )

The Ultimate Chocolate Chip Cookie
These are BY FAR the best chocolate chip cookies I've ever made. My mom made them for co-workers, and I made them to include in Christmas gift bags. I can't get over how good they are. My mom followed the recipe exactly, and even though flat, we both agreed they were the most delicious cookies. I'm baking them today, and I used 1/2 t. baking powder and 1 t baking soda. Although still kinda' flat, who needs 'poofy' when you can have chewy and delicious?!
