Hoppin' John
hoppin' john is traditionally made with smoked sausage, rather than ham, as well as braised collard greens. I recommend sticking to the traditional recipe, as I found that it is much better that way.

Gingerbread Men
The first comment below had me worried, saying that there wasn't going to be enough liquid in the recipe, however I tried anyway and the results were great. I'm having a gingerbread city building project so I tripled the recipe and it just came out to be a normal amount of dough! I'd recommend doubling the recipe if you need to have the 30 servings listed here.
