Fried Avocados

I followed this recipe almost exactly - I seldom follow anything EXACTLY... I only needed half a cup of flour, and instead of using the seasonings listed I used Emeril's Southwest Seasoning blend to season the flour. I loved them! I've never had fried avocado before, so I can't compare them to another recipe, but the ones I made tonight were definitely YUMMY! Thank you for the recipe!

Cornbread Pancakes

I made these tonight with minor changes...I read some reviews that said they were a little sweet, so when I doubled the recipe instead of doubling the sugar, I used the original 2 Tbsp as instructed. I also changed the flour to 1 cup of all-purpose flour, and 1/2 a cup of Masa flour (for making tamales) and used the full 1 1/2 cups of yellow cornmeal. They were delicious and went perfectly with the soup I made for dinner. I'll be making these again! If I hadn't doubled the recipe, I would have used 1/2 cup all-purpose flour, 1/4 cup Masa flour, and 3/4 cup cornmeal. That would be in keeping with what I did tonight. (oh, and only use half the sugar for a less sweet pancake). This was just what I was looking for - thank you for posting the recipe!

Healing Cabbage Soup

Yum! Like many others, I changed a few things. I didn't use the 3 Tbsp olive oil, but gave the pot a healthy spray of olive oil spray, instead. I used a bag of frozen "soup mix" that had a blend of onion, celery, bell pepper, and parsley. It didn't have much parsley, so I added a little fresh chopped that I had on hand. I also added a can of new potatoes (drained and cut into bite-size pieces), some Italian seasoning, and a few squirts of sun-dried tomato paste. I used a 32 oz box of chicken broth instead of the water and bouillon, and that seemed to be just right. It's great!!
