Mom's Best Peanut Brittle

Love it! Made a rosemary and pine nut brittle with it. Chopped up about 2 t. of rosemary and then added in pine nuts. It tasted just like the original peanut brittle (I've made this many times before). But then I get to brag to everyone at Thanksgiving and say that it a "rosemary pine nut brittle" in my best English accent.

Slow Cooker Chicken and Dumplings

I cried the first time I made this recipe! It was so ridiculously good. I figured I could never match my grandma's twice-a-year-made-on-paper-bags dumplings. Boy, was I wrong! We make this now at least once every 1-2 weeks. The last time I made it, I was the last to come home from work (had to work late) and I forgot that I had made it for dinner. (I must have been pretty tired. What a shame!) By the next day, I remembered and came home excited to eat leftovers only to find there was none left!! I was so sad! When I make this, I do not add veggies. That seems weird to me. I also use all chicken thighs. I will do two packages of chicken thighs (about 10 thighs), chicken broth, soup, butter, and spices. I try to start it around 10am so the chicken only cooks about 6 hours on low. Don't overcook. The chicken will be tough if you do. I also cube the chicken before cooking. I don't like shredded chicken. Yuck! When DH gets home, he adds the biscuits (the best part!). The cheaper and more off-brand, the better! The commenter that added only 1 can is NUTS! We add THREE cans and would add more if we didn't run out of room in the crockpot! And, if you're like me, you're probably thinking "CANNED BISCUITS?? NO WAY!" I did too. Even 30 minutes into watching them cook. But have faith! They are sooooo good!!! They do not taste or look like biscuits in the end. After cooking for another hour-ish, dinner is ready! Every time I make this, my family is SO HAPPY!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

I thought this was pretty good. It was definitely easy to make, but the mayo taste was a little over-powering and the dressing tasted slightly sweet in the end (from the mayo). We made it to go with buffalo wings and when combined with the buffalo wings, it tasted really really good. I think I will keep searching for a better recipe though.

Creamy Potato Casserole

DE-LISH!!! I mixed part mild and part sharp cheese to make this dish (based on another review). We also found that the potatoes need to cook for a good 60 minutes in order for them to soften. Dish was devoured at our event! Everyone loved it. We ended up adding 4 c. cornflakes (crushed) combined with 2/3 stick of butter to make a crunchy topping. Yum!!

Fruit Oatmeal Cookie Bars

We loved these! They were super fast to make. We followed the review about using the apricot preserves and they were super-yummy. We also doubled the recipe and used the 9x13 pan. Next time we will try the bit more healthy approach and use Smuckers Simply Fruit apricot preserves. I will say that they are messy to make. Even after cooling for an hour, if I tried to cut them, they would fall apart, so finally I put them outside on the porch (in the dead of winter) and the next morning I was able to cut them apart without them falling apart. We also followed the part about buttering the foil, but this didn't work. The foil ended up sticking to the bars in the corners and I was peeling it off it little bitty pieces. Total pain. Next time I might try baking on parchment?

Monster Sour Cream Enchiladas

This was the best recipe we've made yet from this site!!! DEEEELISH! We loved it so much, I made sure to come back and do a review. For those people that didn't use the 2 cheeses, you are MISSING OUT! The cheeses together were amazing. I normally don't like this much cheese, but it was sooooo good. Also, we followed the reviewer that recommended the bean and bacon condensed soup and taco seasoning. Those were perfect add-ons. I can't imagine using cream of chicken. The bean and bacon has the consistency of beans/refried beans and with the taco dip added in, it tasted just like a Mexican dish. I would recommend to just layer the ingredients and add more tortillas. I ended up with 5-6 tortillas in the dish and husband and I both thought that amount should have been doubled. Like the previous poster said, the whole thing just fell apart by the time it's done and probably would have held up better with a lot more tortillas and layering. Plus it would have cut down on prep time by quite a bit. One last thing. . .to "roast" the chicken (I'm not a cook so I didn't really know how to do this) we used boneless chicken thighs on high broil for 10 minutes - 5 minutes on one side and 5 minutes on the other and then cut that up and put it in the dish (leave them still a bit pink). I was SHOCKED at how tender and yummy the chicken was this way!! I will probably do this for many more recipes now that I know. This will be a regular in our house!!
