I usually do not buy round eye roast because it's too tough. However I came across this recipe and decided to give it a try and boy was I surprised. I cooked the roast exactly as the recipe (temperature) but I stuff garlic into the meat before baking. The roast came out absolutely tender and juicy. I would highly recommend this recipe and wis giving it a full 5 stars! My whole family loved it! I will be saving money this Christmas by cooking this roast as opposed to buying prime rib for my 25 guest.
