New Orleans Stew with Smoked Andouille Chicken Sausage

Yep! This recipe gives new meaning to the word "stew", which would ordinarily be met with disappointment in my house. This has tons of variety and flavor and is quick to make. I did heed another reviewer's advice and was quite cautious with the cayenne (I used only 1/4 teaspoon and thought it was plenty). I added baby mustard greens from my garden and some avocado cubes. I believe this would pass the Paleo diet test, although I am not an expert on that. Yum, yum--I will definitely be adding this to the rotation!!

Zesty Quinoa Salad

Loved this dish! We used garbanzo beans in place of black beans because it was what we had on hand. We put in on a bed of lettuce with some grilled chicken breast, added a small amount of salad dressing and found it delightful!

Luck o' the Irish Brownie

Good flavor combinations but far too sweet. The mint layer could be much thinner, or, as someone else suggested, make it into a cream cheese frosting.

Merritt's Butternut Squash Gratin

After I baked the butternut squash for 50 minutes and considered the huge pile of bread crumbs/cheese that I was supposed to pour on the dish for the final 15 minutes, I just couldn't bring myself to do it. I used probably half of the cheese/bread crumb mixture and while I was very impressed with the flavor IDEA of the thing, it was just WAY TOO GREASY and salty. I may try what a previous reviewer said--twice the squash and half the cheese mixture.

Grilled Bacon Jalapeno Wraps

These burned to a crisp due to flames in the barbecue. I think I will try this in the oven using a broiling pan.

Ginger Chili Citrus Salmon

This was a big hit with my husband and older kids. I served it with Black Bean and Rice Salad. I made a few modifications: I used 1/4 c. cider vinegar, no sugar and 1/4 t. salt. It reminded me of the island food we've had in the Caribbean--very fresh-flavored and light. My friend is having a bumper crop of apricots, so we had a few of those on the side. DELICIOUS!

Black Bean and Rice Salad

I tinkered a little bit with this just to suit the tastes of my various family members (less black beans and red bell pepper for my kids), but I have to say the overall taste was so fresh and delightful! I served this with Ginger Chili Citrus Salmon, and it reminded me of the island food my husband and I have enjoyed in the Caribbean, but even better! It is more an adult taste, but I just saved some plain rice for my younger ones. I used regular brown rice, not instant.
