West Coast Cod and Shrimp

I read some reviews before making this dish and I took some of the advice. I am not a fan of dill so I used some dried tarragon instead. I also added a dash of sherry and I am glad I did. The dish turned out fine but it would have been very bland without the sherry. I omitted the milk and cornstarch and I did not cover the dish when I put it in the oven. The sauce had a nice consistency and was not too watery. Overall, I found the effort I put into this dish was not worth the outcome. I will not be making this again.

Stir-Fried Rice

My husband made this for a potluck. He followed the recipe and didn't make any changes, and this came out perfectly! Everybody loved it - thanks for sharing!!

Pumpkin Cheesecake II

This pumpkin cheesecake is outstanding! I read the reviews first and used gingersnaps instead of the graham crackers... loved it! The only other thing I changed was that I added a sour cream topping (1 container sour cream, 2 Tbs. sugar, 1/2 tsp. vanilla extract, 1/2 tsp. cinnamon extract, 1/8 tsp. salt). I would stick with the whipped cream as Cathy recommended, maybe vanilla flavored. The sour cream topping was just a bit too much for the cake. Anyway, it was a great hit - thank you so much for sharing! I will make this again!!

Garlic Roasted Chicken and Potatoes

I made this for the first time today and it was completely easy and absolutely delicious! I followed the recipe exactly but left the chicken and potatoes in the oven for an extra 10 minutes to make sure they were done (I couldn't find my thermometer). As a vegetable, I added plain green beans and I spooned some droppings over them. Thank you for this great recipe!!

Quick Tuna Casserole

I only added a leftover chopped green onion and some cayenne pepper and topped the casserole with breadcrumbs mixed with melted butter. This dish came out great!! It was quick and easy - I will definitely make this again. Thank you for sharing!

Spicy Turkey Stir-Fry

Great recipe! I made a couple of changes, nothing huge though. I finely chopped 5 cloves of garlic and a piece of fresh ginger (approx. 1 inch x 1 inch) together and added them with the turkey right away. Because I used fresh ginger I omitted the ground ginger, and I doubled the cayenne pepper for additional spice. I also reduced the chicken broth a bit and omitted the water, because I only had 1/2 lb of turkey and 2 cups of broccoli and I was worried there would be too much liquid. I didn't have any peanuts but I am sure they would be a perfect addition. Thank you for sharing!

Mini Lemon Meringue Pies

Made these yesterday and they turned out wonderfully! I doubled the recipe to make 12 mini pies and I omitted the almond extract and it worked perfectly, they were absolutely beautiful and delicious. Will definitely make these again, thanks for sharing!!

Tofu Pad Thai

Sorry to say that I did not like this at all. In retrospect, I would omit the soy sauce, use less fish sauce, more tamarind, no paprika, pepper flakes instead of the cayenne pepper, and balance the whole thing with some tomato paste - all of which makes it an entirely different dish though. Will not be making this again.

Marinated Tofu

I would have to agree with Jessica - the tofu did turn out very mushy. Doubling the marinade and only marinating the tofu for an hour or so may have done the trick. Personally, I wasn't too thrilled with the overall flavor. I thought it turned out a bit boring and not tasty at all. Won't be making this again.

Sesame Seared Tuna

This turned out perfectly. A note on the amount of the sauce - I only made 2 tuna steaks and the amount of the sauce was perfect so I would double it for 4 steaks. Also, did not need 1/2 cup sesame seeds - I used about a tablespoon per steak (half on each side). Thanks for sharing, will definitely make this again!
