Amish Breakfast Casserole

Reviewed: Feb. 25, 2009
I really liked this recipe. Brought it to a brunch and it was enjoyed by all. I followed some suggestions and added more eggs (10 in total) and shredded my own potatoes (not much work considering the savings, it was 2 large potatoes). I used veggie breakfast sausages and would probably add a little salt if making it vegetarian but if using bacon, ham or meat sausage it would be fine. I assembled the night before and baked in the AM, next time I would bake at night and just warm in the oven in the AM.

Grandmother's Buttermilk Cornbread

Reviewed: Nov. 23, 2009
I made this as directed with a couple exceptions. I used my cast iron pan and let the batter less the salt and flour set while the oven/pan were preheating. I melted some lard (yes lard, its great for pie crusts) in the pan then added the batter. Also I melted the butter in a glass bowl in the microwave and then added remaining ingredients as called for in the bowl, instead of using skillet on stove top and mixing in skillet. The end result is a super yummy bread that is moist and well balanced, just enough sweetness. This is a more NE style corn bread, not southern. But don't let that stop you, its easy and great with BBQ, chili, breakfast, just about anything.

Buttermilk Pancakes II

Reviewed: Jul. 15, 2012
These are great!! The only thing I did differently was to add a little vanilla (I do this with all our pancakes) but there was a delicious buttermilk/tangy flavor and subtle sweetness to these pancakes that was perfect. The texture was as a good pancakes should be with good fluff and almost creamy, not at all dry but not gooey either. We'll be adding this to our pile of pancake recipes for sure!!

Clone of a Cinnabon

Reviewed: Jan. 5, 2010
Yum, yum, yum!! I've been searching for a reliable cinnamon bun recipe and this is it! This was very easy to make and turned out amazing. I made the dough the night before shaped the buns and refrigerated them overnight, took them out for 30 mins then baked them. Everyone raved about them and they were gone in a blink. I though I might need some extra icing but it worked out perfectly, I did cut some of the sugar out of the icing, it was just a tad on the sweet side but that is personal taste. Thanks for sharing this fantastic recipe!!

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Jan. 13, 2010
This is great. Its simple and tasty and really highlights the flavor of the salmon. I would not change a thing. I used Trader Joe's dijon mustard (its got a good kick) and it cam out beautifully. The 10 mins per inch was perfect. This is a keeper!

Marie's Easy Slow Cooker Pot Roast

Reviewed: Jan. 27, 2010
Easy, easy, easy! And the meat was so good. I seasoned the meat with Montreal Steak seasoning and dusted with flour (used a chuck roast). Started it cooking in the AM with just the liquid (I added just a little more), soup mix, celery, onion and some garlic. I added the carrots, potatoes a couple hours before it was done. The meat fell apart and had a nice flavor to it, the veggies were cooked well not mushy and the gravy was so yummy. Super and easy definitely a keeper!

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Jan. 31, 2010
Yum, yum, yum! I, too, did not use tomato soup, we don't like canned tomato soup at all. Instead I used 2 cans of diced tomatoes and 1 can of stewed tomatoes, I crushed everything with my hand before adding to the mixture. We used chicken instead of turkey because its what we had. The spices are great, very well balanced, and it would be easy to make more or less spicy to one's taste. I would not decrease the cumin, it add a nice depth of flavor and isn't really spicy just smoky. Thanks for sharing this!!

Seven Layer Bars

Reviewed: May 29, 2010
These are addicting. I've made them several times with the only change being that I use pecans instead of walnuts. They are great! I haven't really had a problem with them sticking but I always use my stoneware bar pan and it is well seasoned so that might make the difference. If I was using a metal/glass pan I would probably use parchment paper on the bottom. Give them a try, they're simple, fast and super tasty (just be sure to let them cool well). Thanks for sharing Patty.

Breakfast Quiches to Go

Reviewed: Feb. 25, 2009
This is a great recipe, very simple and tasty. It was gone very quickly!! That said I did make some changes to suit my needs, I was bringing this to a mom's brunch and wanted to get more servings. So I put the rolls onto the bottom of a 9x13 casserole and put the eggs on top. I used 3 add'l eggs simply because of using the casserole. As the casserole I baked this for about 30 mins. Probably the only change that I would make regardless of size is to saute the onions before putting them into the egg mixture.

Crumb-Coated Chicken Thighs

Reviewed: Jun. 16, 2010
Our family really liked this recipe. Other than using panko bread crumbs I made this as written. The spices were so yummy, nicely balanced (not too hot but a nice spice with great flavor) and I like the crisp of the panko crumbs. Going forward I'll use this breading on our chicken tenders too. Lastly both my kids (2.5 y and 11 mo) ate up the chicken and loved it!

Bourbon-Mango Pulled Pork

Reviewed: Dec. 6, 2010
This is AMAZING! So easy, so yummy. I could go on and on about it. The first time I made this I used pork loin, it came out OK but not anywhere near as good as the second time I made it, using the shoulder/butt cut. My second time I doubled the recipe and froze the leftovers, they are getting better and better!! Try this you won't be disappointed.

Puff pastry and sugar, how can you go wrong? These came out great, I did add some cinnamon and did not flip them while baking. These were super easy and fast to make and even faster to eat. :-)

Spinach Quiche

Reviewed: Jul. 18, 2011
This is a great recipe! I made it as written and with artichoke hearts and garlic added, both were delish. I did use panko bread crumbs instead of the croutons, because of what I had on hand, a lighter option but I don't think they made a significant taste/texture difference. Going forward I'll keep the change/addition of the panko and garlic.
