About this Cook
I am pretty fearless with my cooking. I will try just about anything and I tend to have a pretty good sense about what will work and what won't. I'm a stay at home mom with two little girls. I do some freelance graphic design and then chase my girls around. Cooking has been more challenging but I'm reclaiming my love for cooking and carving out some time to really spend cooking each day.
My favorite things to cook
I love baking!! I'm a good cook but baking has always been easy for me. Other than that I enjoy stir fry and crock pot recipes and just about any type of food. Cooking and baking are relaxing to me and I love the process of creating something to nourish those I love.
My favorite family cooking traditions
I have so many memories of my grandmother cooking, especially around the holidays. For the whole month of December she always had spritz cookies in a basket in the kitchen. She has alzheimer's now and has not been able to cook for quite some time but I have inherited her cookie press so I'm continuing the tradition.
My cooking triumphs
I've had many cooking triumphs but one that comes to mind was my first St. Patty's Day (on my own) and I made corned beef boiled in Guinness. I can't remember but I may have gotten the recipe from this site.
My cooking tragedies
I decided to make sloppy joes in my crock pot. The recipe called for browning the meat first, well I browned it a little too much and when we ate later it was just too well done.

Truck-Stop Buttermilk Pancakes
This is a huge recipe, but don't let that turn you off because it's really good. We have made the full recipe and scaled down and either way it is yummy. If I don't have buttermilk on hand I use the 1C milk + 1T lemon juice to make the sour milk. The lemon adds a nice flavor, especially if we add blueberries! Yum!

Buttermilk Pancakes II
These are great!! The only thing I did differently was to add a little vanilla (I do this with all our pancakes) but there was a delicious buttermilk/tangy flavor and subtle sweetness to these pancakes that was perfect. The texture was as a good pancakes should be with good fluff and almost creamy, not at all dry but not gooey either. We'll be adding this to our pile of pancake recipes for sure!!

Teriyaki Marinade
This recipe is great! Its my go-to for teriyaki especially with boneless, skinless chicken thighs on the grill, delish!! I usually use less sugar but thats just our taste. And I've made it with fresh and dried of the garlic, onion and ginger, depending on what I had on hand, it was great with all (just be sure to use more fresh or less dried/ground since the dried is more potent). This also freezes fabulously, I'll take a large amount of chicken (or another meat) and combine this marinade with the meat in a freezer bag and then freeze it until I need it. The marinade prevents freezer burn and really develops a nice flavor.
