Creamy Sherry Mushroom Soup

This is a very easy soup with EXCELLENT results! I did make some minor changes due to personal taste and lack of availability of ingredients -- first, I used shallots instead of an onion (for their milder flavor), and I also used a mixture of different kinds of mushrooms - both of which worked out fine. Don't bring soup to a hard boil at any time, just follow instructions as they are. After making the soup, I put it in a crockpot on Warm, then on LOW for a party that was several hours away - it kept the soup at a perfect temp and everyone LOVED it! Served it with snipped scallions to top it off and croutons which complimented it very nicely. Will definitely make this again!

Chocolate Zucchini Bread I

EASY to make, moist, chocolatey and looks exactly like the photo. Makes two beautiful full size 8x4 inch loaves; when baked in 9x5 inch pans, loaves looked too small. Made 4 loaves in one day - the first time I did not have two 1-ounce squares of the unsweetened chocolate so I just used one 1-oz. square and it was totally fine. I cut the amount of salt in half for health reasons (using just 1/2 teaspoon) and omitted the cinnamon due to personal taste; also, since I did not have regular size chocolate chips I substituted mini chips which got "lost" in the batter, so I do think using regular size chips is a better idea. Only needed to bake each batch for 55 minutes at 350 degrees, certainly not 60-70 minutes as recipe states. Will make again and add walnuts on top for some crunch.

Cranberry Orange Bread

Needs More Baking Time! I made this recipe exactly as given and the loaves were definitely not baked through completely after just 40 minutes at 350 degrees - it took more like 60 minutes. Like other reviewers, I used fresh cranberries, however I cut them in half which resulted in them not all sinking to the bottom of the bread, which I have experienced previously when using large berries. The orange extract is a must - it really brings out the flavor. Be sure to completely drain the mandarin oranges - too much moisture here and the bread will be of a soggy consistency. Sprinkling chopped walnuts on one loaf and coarse sparkling sugar on the other enhanced their appearance and added a delightful crunchiness.
