Banana Fritters

Reviewed: Jun. 18, 2002
When I told my husband I was making banana fritters for dessert, he looked at me like I had two heads and said, "O.K. Whatever." After tasting a few he exclaimed, "These are fantastic!" They are a perfect little dessert when you don't want to spend a lot of time preparing and/or shopping because all of the ingredients are on hand.

Homemade Cereal

Reviewed: Jun. 22, 2002
Yummy, yummy cereal that stays crunchy in milk. I halved the recipe and did some substitutions due to lack of ingredients: I cut out the germ, dates, and coconut, and I added 1/2 cup of flour, 1/2 cup bran cereal (looks like twigs), and 1/2 cup of sliced almonds. This cereal is barely sweet, so I added some raisins to my bowl when I served it. I'll definitely be making this again!

Barbecue Beef Cups

Reviewed: Jun. 22, 2002
My husband and I both ended up just calling this one "food." It was okay, but nothing we'd like to eat the leftovers of or make again.

Can't Tell They're Low-fat Brownies

Reviewed: Jul. 30, 2002
This is a recipe only for a moment of diet desperation. You can tell they're low fat, but if you're trying to cut the fat, these brownies will do.

Roasted Vegetables

Reviewed: Jul. 30, 2002
Easy and absolutely delicious--and this coming from a person who normally doesn't eat vegetables. I did even more substitutions by using Italian & yellow squash instead of butternut. This is definitely one of the yummiest ways to eat veggies.

Lyonnaise Potatoes

Reviewed: Aug. 19, 2002
Simple and delicious side dish. I baked mine for about 35 minutes to brown the potatoes more. It sounds like a lot of butter, but it made the dish all the yummier.

Devil's Food Cake I

Reviewed: Aug. 23, 2002
This recipe is good, but not outstanding. I wouldn't say it has the "pound cake like texture," but rather a regular chocolate cake texture. The recipe is good, though because all ingredients are generally on hand.

Easy Cocoa Ice Cream

Reviewed: Dec. 26, 2002
This ice cream didn't taste rich enough for all of the calories it contained. I would describe it as tasting like chocolate marshmallow, and my husband said it reminded him of the Carnation chocolate malts he used to get at the ball park. It's a good eggless alternative.

Chewy Sugar Cookies

Reviewed: Dec. 26, 2002
These cookies did spread a lot, but were chewy and delicious. I made mine into two logs that I refrigerated and cut into 1/2-inch slices and froze so I could bake a few at a time as desired.

Vegetable Beef Soup II

Reviewed: Jan. 12, 2003
Fantastic soup! This is exactly the recipe I was looking for to satisfy my vegetable beef soup craving. Tastes just like what I get at MiMi's Cafe. I used top sirloin steak, cubed, instead of the ground beef, and simmered with liquid and seasonings an hour and a half before adding the veggies. I also added diced zucchini. Yum.

Whole Wheat Beer Bread

Reviewed: May 15, 2003
Yummmmmmy bread. I'm normally disappointed in beer bread, but not this time. I generously buttered my pan and then spread a couple of tablespoons of butter on top before baking and I got a nice crisp, chewy, delicious crust. I also changed the flour combo to 2 cups all-purpose and 1 cup whole wheat. I also used a bottle of Tequiza for the beer.

Best Brownies

Reviewed: May 17, 2003
The title is correct; these are the best. Fudgy, dark, moist. My husband and I have almost finished the pan. I added 3/4 cup chopped pecans and 1/4 cup chocolate chips just for an extra kick. So easy to make--why would you want to buy a boxed brownie? I also tried making these using half the butter, substituting 1/4 apple sauce for the deleted butter, and they still turned out yummy. They were a little more cakey and harder to cut, but still delicious.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 16, 2003
Absolutely fabulous pumpkin bread! I use 1 1/2 cups brown sugar and 1 1/2 cups white to make it even richer. Also great with lots of pecans. My husband always asks for it, even in the middle of summer.

Amazing Pecan Coffee Cake

Reviewed: Jun. 20, 2004
It isn't something I would crave, but it IS delicious. Some topping kind of sinks into the cake, giving it a yummy marbled effect. I didn't have a whole cup of sour cream, so I used 1/2 cup sour cream and 1/2 cup whole milk. The cake is "melt-in-your-mouth" buttery, and despite one reviewer's comments, it was very flavorful. I added just a pinch of salt to the topping, though.

Pretty good for what it is, a substitute for "real" pancakes. Very hearty.

Mall Pretzels

Reviewed: Jan. 17, 2006
Maybe there's a copyright issue here, these are like Auntie Anne's pretzels, not Wetzels. I also make "pretzel dogs" with this recipe. Just take a rope, wrap it around a Hebrew National hot dog, dip in the soda water, and bake til nicely browned. Brush with butter. The kids love them.

Down Home Macaroni and Cheese

Reviewed: Apr. 28, 2006
Yummy, yummy, yummy. Creamy, cheesey, satisfying. I used rotini pasta (probably could've used almost 3 cups uncooked--very saucy). I also replaced 1/2 cup of the cheddar with provalone, and added pepper, a dash of onion powder, and a pinch of crushed red pepper flakes.

Chocolate Toffee Crunch Bars

Reviewed: Jun. 18, 2006
As per other reviewers, I reduced the graham crackers by 1/2 cup. Everybody at the poker party loved these bars, but I was expecting more toffee crunch to them. Good flavor, but the texture was lacking. If I'm craving toffee, I'll stick to making just toffee.

Light Wheat Rolls

Reviewed: Aug. 29, 2006
Wow! These rolls turned out fantastic! Nice yummy crust on top, soft, light texture inside. I used only 1/4 cup of sugar, and I added 1 tablespoon of vital wheat gluten too. As one of the other reviewers did, I made cinnamon rolls out of half the batch, and they too were delicious. I'll be making these again to impress my friends and family.

Apple Crisp II

Reviewed: Oct. 8, 2006
This crips smells like heaven! Tastes super yummy with vanilla ice cream. I also doubled the crisp part, but didn't quite use it all. Came out perfectly delicious. I used mostly granny smith apples and added a couple of honeycrisp apples for their flavor. I'll be making this again.
