Seminary Muffins

I made this recipe and all I did was cut back the sugar to 1/2 a cup, used 2 bananas and excluded the nuts. I love the mini muffins - it makes 48 of them at only 43 calories each!

Healthier Soft Oatmeal Cookies

I made these, just substituted a 1/4c egg substitute for egg and 1/2 of the butter for apple sauce. They are chewy and thick, a good mini granola bar, but not a very appetizing soft cookie. Next time I'll try it per the recipe and adjust my review if they're better! Also, I made 1/2 the recipe with dates and 1/2 with chocolate chips - each 1/2 made 30 mini cookies that are 79 calories each if you enter the ingredients into myfitnesspal

Classic Bran Muffins

Just made these tonight with ingredients I had in the house. Substituted 50% of the oil for apple sauce and made the buttermilk with 1% and lemon juice. Chopped up 4 dates I had in the freezer instead of raisins. Great mini muffins at 70 calories per muffin (per myfitnesspal app recipe creator) for 24 muffins. Though they were big, I should have made 36 minier muffins!

Best Chocolate Chip Cookies

These cookies were excellent - I had a great afternoon making them with my 5 year old twins. They were salty, crispy, moist and delicious - we skipped the walnuts and did 1/2c unsalted and 1/2 c salted butter but other than that stuck to the recipe!

Grilled Rock Lobster Tails

I've made these twice now and they are delicious and easy. The first time I BBQed them with steak and put them on when I turned the steak so that they would be on the grill for 7-8 minutes...but they weren't quite done so I had to finish them under the broiler for 3 minutes. The second time I cooked them for 7-8 minutes each side on the grill with our steak and they came out perfectly!

Grilled Romaine Salad

All I can say is DO NOT substitute green onions in this recipe, or if you do then minimize the amount of green you use or it turns out WAY too bitter. I had to add a bit of honey and finally some strawberries to the food processor to try to combat the bitterness in the dressing. Not the fault of the recipe at all. I'll try it again with shallots.

Better Than Sex Cake II

I've never had or made this cake before - it was delicious but very sweet. I used real whipping cream instead of coolwhip on it which has no sweet to it at all and it was still very rich.

Jay's Signature Pizza Crust

I've made this twice and it was my first and second ever attempt at pizza dough or dough of any kind! I followed the recipe exactly - the second time I made it (because it makes 2 large thin crust pizzas) I put half the dough in the fridge overnight and it still made delicious pizza the following day. Thanks for this easy and awesome recipe!

Best Ever Party Appetizer

I made this recipe the other day and it was a hit! I spread out the goat cheese instead of slicing it, into an oven ready dish. Mixed the ingredients in the food processor until it made a paste. Spread the paste over the goat cheese and warmed it in the oven for 10 mins at 350 and then drizzled it with a little honey and served with crackers, it was delicious.

Slow Cooker Chicken Taco Soup

Another great recipe on allrecipes! Made this using the Taco Seasoning I recipe and it was delicious. I did substitute the beer for the chicken broth and I used Rotel Original for the tomatoes with chilis. I used boneless skinless chicken thighs for the meat...it made it to number 3 in my husbands all time favourite home cooked meals in its first ever appearance on our table...now that's good!

Slow Cooker Mongolian Beef

I made this recipe last night - following some other reviews I cut back the sugar by about a third, used sodium reduced gluten free soy sauce and added the green onion after 2 hours. I doubled the meat but left the amount of sauce the same. I also skipped the step with the corn starch and the browning, it didn't need it. I sliced the flank in about 1/2 inch thick slices across the grain and then cut into about 1 inch long pieces. I cooked for exactly 4 hours and it was tender and delicious. At about 3.5 hours I took out as much of the sauce as I could and reduced it in a sauce pan until it thickened up. When serving the meat I took it out of the slow cooker with a slotted spoon letting the loose sauce drain off - transferred it into a serving dish and poured over the reduced sauce, which was delicious. I served with broccoli slaw sauteed with butter and added a little soy sauce, rice vinegar and sugar dressing when serving and a fried rice.

This was definitely not good, if you look at my reviews I almost always review Excellent. It still definitely tasted like it was bean based...not my favourite gluten free recipe.
