Best Bourbon Chicken
I substituted chicken broth for the apple-grape-cherry juice right off the bat... and it seemed plenty sweet to me. I also used boneless, skinless chicken thighs and it came out tasting just like the Bourbon chicken at the mall! Used Jack Daniels instead of Southern Comfort because that's what we had. After letting the chicken chunks simmer in the sauce for 20 minutes, I took out the chicken and cranked up the heat to med-high and boiled for a few minutes to help cook off some of the alcohol smell and reduce the sauce even more before whisking in the slurry mixture. In the future I may also reduce the amount of soy sauce. But overall this recipe, with the changes, was fantastic. Definitely a keeper!

Chicken Tikka Masala
I actually became an Allrecipes member so I could review this dish... wow! It is as good as any restaurant I've been to. Thanks to the comments from other reviewers, I cut the salt. I'm not sure by how much, I just kind of seasoned along the way, a few turns of the sea salt grinder each time, and I also only used half the jalapeno. The yogurt marinade makes the chicken so moist and flavorful. Rather than skewer and grill, I picked the chicken chunks out of the marinade, shook them off, and placed onto a hot, well oiled grill pan on the stove. They only needed 3-4 minutes per side, and watch them closely because the yogurt can easily burn. In fact, I was worried that I'd burned them... but the "char" actually added a lot to the flavor in the end. I was also worried that the tomato/cream "curry" wasn't going to get thick, but I let it simmer for the 20 minutes, then another 10 with the chicken as the recipe instructed and it was perfect! The only thing is that it turned out quite spicy for us, even with only half the jalapeno. Next time, I think I will cut the cayenne and pepper, and maybe also the cumin, in the marinade. I threw some cilantro into the mix at the end, and also garnished with it. My local grocery store carries naan that you heat up in the oven, perfect combo! Looking forward to experimenting with this recipe again.
