Azteca Soup

This was great! SO easy to make too! Next time - I hope to try the baked strips for the garnish (I used crumbled store-bought baked chips to save some time). Will definitely make again...and again...and again! Maybe with a few suggestions by other reviewers - but the base recipe is GREAT as is!

Chicken with Tomatillos and Poblanos

I will definitely be making this one again! I don't know if my produce was "larger" than intended in the recipe, but I needed almost double the chicken broth and a LARGE saucepan. Note to those who have not charred and removed skins from peppers before...allow extra time - as it's not easy (I found out the hard way) but it is definitely worth the effort to get at least SOME of the skins off. (Plus the roasted peppers add an extra dimension to the dish)

Banana Chip Muffins II

I thought these were really good and I will definitely be making again and again. The only change I made in my first batch was using 1/4 cup of Egg Beaters instead of the two whites. Next time, I may try using some wheat flower, as another reviewer suggested for a bump in the health factor. If you are looking for something very healthy and low-fat AND very tasty - this is definitely for you!

Ibby's Pumpkin Mushroom Stuffing

My husband was raving about this stuffing that I served at a dinner party. I had some extra pumpkin bread, so I thought I'd give it a try! Wonderful. I didn't add the mushrooms, but added chopped walnuts instead. I would definitely recommend at least doubling the veggies added and adding a bit more chicken broth (then again, I like my stuffing a bit "mushy"). I served this with Apple Rosemary Pork Tenderloin, a great pairing!

Apple Rosemary Pork Tenderloin

This was a really great recipe that all six people at the dinner party enjoyed. I followed the recipe to a T, but found that it cooked more quickly than it said. Next time, I think I would add a bit more salt and perhaps pour off some of the drippings after the first hour to make the gravy and leave some to cook the apples and onions in the second hour. At the end of the second hour - I'll just put the rest of the drippings in the already started gravy. Overall - I'll definitely make again. (I served this with Ibby's Pumpkin Bread Mushroom Stuffing - and they were a great pair!)

Strawberry Oat Muffins

I thought that the base recipe was great, but I'll try another fruit such as blueberries next time - the strawberries didn't have enough flavor. I also added a few chopped pecans to the mix and that worked well. I will definitely be making again!

Key Lime Pie I

Everyone loved this pie - even though I used 1/2 lime juice and 1/2 lemon juice instead of the key limes. I will definitely be making again soon - especially now that I finally found some fresh key limes!

Chocolate Decadence Cake I

Our church has a Seder each year and I took this as my dessert this year. It got rave reviews from the crowd, though it was mostly because it was like a pan of chocolate goo. I left it in as per the directions, and even cooked it in a slightly larger, square pan - and it still didn't completely set as a cake. I'm not sure if that's because I didn't beat the eggs long enough or if I needed to cook it longer, or if it's just supposed to be that consistency. It was kind of like the middle of a really fudgy, undercooked brownie - but the top had a crunch layer. Personally - I thought it was AWESOME, as I love undercooked brownies, cookies and raw doughs and batters. But if I were making it for a crowd again, I would cook a bit longer.

Buffalo Chicken Dip

I had this recipe twice before I made it and thought it was great. When I made it, I only made one change, which was to use Blue Cheese dressing instead of Ranch - and it made it even better. The day after the party - we used the leftovers to make wrap sandwiches - which turned out okay, but gave me a tip for next time - adding diced celery and green onions to the mix AFTER it's cooked.

Chocolate Chip Cheese Ball

This was definitely well received at the party I took this to. It definitely goes in the "dessert" category - not really a cheesy appetizer though. It's basically like thick cream cheese frosting with chocolate chips and pecans. I will defintely make again!

Crab Stuffed Haddock

I made this for Valentine's Dinner and it was delicious. I had never cooked "non-shell" fish before, but it was simple. My only hint to cooks is to have your bread finely cubed (diced?) - or even use one of those unseasoned stuffing mixes instead of the bread. The consistency of the stuffing I made was a bit too chunky for the flakey haddock. I might also add in some parmesan next time - but was WONDERFUL even without.

Libby's® Pumpkin Cheesecake

I actually made this back at Thanksgiving and it got rave reviews, including a hug from one person who wondered why I made him eat the rest of the meal when he could just enjoy this! I did use a gingersnap crust from another recipe though - and would HIGHLY recommend others do so too!

Apple Crisp II

This came out great! I followed the recipe exactly - and it definitely wasn't too sweet. May have been my selection of apples (Macouns and Empires). In fact, I'd almost say that I'd add more brown sugar to the recipe next time and more butter - so that the crumbles weren't as dry. Will definitely make again!

Buttermilk Cornbread Muffins

I was very disappointed with this recipe. I grew up with cornbread made with Jiffy Mix - which I loved. But, I had never made cornbread from scratch before and thought I'd give it a shot. I thought that buttermilk and honey would make an interesting mix. There wasn't much taste, and although the texture seemed dry - there was an odd "oily" aftertaste to them. I think I'll find another recipe on this site or go back to the Jiffy Mix...

Sand Art Brownies

I love this recipe and have gotten rave reviews! I love the brown sugar flavor that is missing from other brownie mixes. My recommendation is to use DARK brown sugar - as it adds a much better flavor. Although I didn't really consider it until I read the comments of other reveiwers, it is a bit greasy - and I may try a bit less oil, but I love gooey brownies - plus the moisture extends the "shelf-life" - if they last that long!

This is such a great twist on an original! I loved the biscuits, even by themselves. I used the suggested recipe of a previous reviewer who didn't have bisquick - and it came out great. Will definitely make again soon!

Great recipe! My sister-in-law does a great variation as an appetizer. Rolls one or two cooked stalks in the proscuitto and cheese and a splash of mustard - and serves as is - no further baking!
