Ultimate Twice Baked Potatoes

My kids absolutely love this recipe. The leftovers are even great the next day. Although I've used crumbled bacon that I cooked the first time I made these potatoes now I take the easy way out and use precooked real bacon bits and they are just as good.

Lentil Soup

I would have given this recipe 5 stars but I thought there was something missing. Perhaps next time I'll substitute the water with chicken broth. I did double up in the crushed tomatoes because I had a big can and I probably shouldn't have done that.

Creamy Spinach Casserole

Great side dish. I substituted the cream of celery soup with cream of mushroom because it's what I had on hand. I also used fresh minced garlic and fresh grated Parmesan cheese.

Mama's Potato Salad

I'm always looking for a great recipe for potato salad. Adding horseradish to potato salad was genius. I didn't change a thing and I added the optional pickles. Definitely a keeper!

Old Fashioned Onion Rings

I made these Onion Rings one day for my family but instead of using 1 onion I used 2 because I thought 1 just wouldn't be enough. HUGE mistake! 1 onion would have been plenty. I also used Panko bread crumbs for that incredible crunch. Absolutely delicious and way better than any Onion Ring you order in any restaurant.

Fried Rice (Sinangag)

I was looking for a recipe for leftover rice and ham and this fit the bill exactly. I did add green onion and I have to say that this was a very flavorful dish. I'll definitely make it again when I have an abundance of ham which usually happens right after New Year's Day.

Nikol's Garlic Bruschetta

I love this recipe and have made it a few times with only a few changes. I used regular tomatoes, seeded and chopped only because I had an abundance of homegrown tomatoes. I toasted the bread for 10 minutes in a 375 degree oven. I divided tomato topping on bread slices then topped with mozzarella and broiled for 5 minutes or until cheese was melted. Delicious!

Roast Adobo Pork Loin

I have made this twice and I didn't change a thing since my family loved it! I was worried about cooking it in a 450 degree oven but the rub actually creates a nice crust on the outside leaving the inside extremely juicy. So easy and delicious!

Creamy Au Gratin Potatoes

I was tired of the basic Baked or Mashed Potato side and I wanted to try something different. The only thing I did differently was to dice the onion instead of slicing it. My husband thought they could use a little more salt and pepper but you can always add that after cooking. I thought the recipe was great and so easy. I used 3 large baking potatoes and actually had enough leftover for 2 more dinners. I think next time I'll cook it a little bit longer so the cheese browns a little... I love that!

My Chili

This was a huge hit. I usually follow the instructions the first time I cook a new recipe and then tweak it the next time. This time I added 1 can of mild Rotel Tomatoes instead of 1 of the cans of stewed tomatoes. I browned the ground beef with the onion and garlic and threw it into my slow cooker. Then I mixed the remaining ingredients including the kidney beans in with the meat. I turned the slow cooker on high for about 5 hours. I thought the consistency was perfect and the flavoring superb. I served the chili on a bed of rice and topped it with shredded cheddar cheese. This recipe is definitely a keeper but I'll continue to make it this way.

Key Lime Pie VII

I have a Key Lime Tree in my yard that is loaded with Key Limes. I was browsing for a recipe with great reviews and came across "Key Lime Pie VII" with 1,061 reviews to date. This was my first attempt in making a Key Lime Pie and I was surprised to see just how easy it is. The most difficult part was juicing the limes which wasn't so bad since I had my husband do that for me. And the pie was delicious! This recipe is definitely a keeper that the whole family will enjoy for years to come.
