Black Bean Brownies

LOVE THESE! I had to cook mine way longer than 30 minutes per my changes. I used 3tbsp flaxmeal mixed with 9 tbsp water; 1/3 c chunky peanut butter; 2tbsp applesauce; and 3 tsp ground coffee (not instant). I probably added too much liquid, but adding the peanut butter gives them a rich, almost box-like texture! SO glad I found this recipe!!

Curried Tuna Melt

LOVE THIS! I followed almost exactly, except used plain yogurt instead of mayo - could not even tell the difference. I also used Hot Madre's Curry Powder, which was plenty enough without having to double. This is great with mozzarella cheese (it was all I had on hand) - though I know it would be excellent with cheddar as well. Will make again. As a poor college student, this recipe is a keeper. (:

Apricot Lentil Soup

SO AMAZING. I've been trying to enjoy lentils for so long but always used recipes that left me disappointed. UNTIL I FOUND THIS. Om nom nom. I followed exactly as is, except used canned tomatoes and doubled the spices. Definitely pair this with a whole grain of some sort - over rice, with bread, etc. It becomes a meal that way and leaves you full for quite some time. Will be making this one again, for sure. (:

Curried Winter Soup

This was excellent, but I must say a few things. Eaten right after cooking, it was pretty unappetizing seeing as the spaghetti squash had not taken in any of the flavors yet. After a night of marinating in the fridge the flavors came together WONDERFULLY, and this dish became 1000x better. I omitted the macaroni and simply upped the rice (I used short-grain brown) to balance out the textures. I also upped the liquid content just a bit because I love me a brothy soup. (: Overall quite a good dish. I would be wary to feed it to a large group - if I was to do so I would be sure to let it sit for at least one day in the fridge if not more and then reheat to serve.

Fragrant Chicken Curry

So I loved this, but it was SOOO spicy for my tastes, probs per my alterations... I tried to make it vegetarian by omitting the chicken & using water instead, but I ended up scorching my mouth. Also, I used 1 tsp pumpkin pie spice and 1/2 tsp cinammon in place of the other spices b/c i was missing a lot of them. I think altogether I just went a little too spice heavy on the entire thing. I'm definitely planning to make this again, though, and cut the curry back to 1 tbsp. I think adding a sweet potato or two would be DELISH, as well as peas, carrots, and perhaps some zucchini. (:

Spiced Quinoa

I really enjoy this. Omitted the pine nuts & raisins, I didn't have any, but added toasted almonds to the top and it was delicious. Also used water in place of chicken stock and it was still excellent. Will definitely be making this one again. (:

Sweet Potato Corn Bread

I really enjoyed this recipe. I altered it to my tastes so it's quite a bit healthier and more flavorful. My changes: Used three cups sweet potatoes, skins still on. Used 1 1/2 cup whole wheat flour and 1/2 cup ground flaxseed. 1/2 cup brown sugar. Omitted the salt and added two tsp pumpkin pie spice. Used one cup milk to compensate for the ww flour. & used applesauce instead of vegetable oil. I baked them as muffins for about 10 mins at 425. They came out quite dense and lighty sweet and flavorful. Would be great with a bit of butter or some apricot jam. (:

Peanut Butter and Jelly Thumbprint Shortbread Cookies

YUM. I filled with strawberry and grape jam, alternately. Also, I filled a ziploc bag with the peanut butter [no oil] after reading the others reviews, zapped it in the microwave for 30 seconds, and then cut a teensy hole in the tip to drizzle. Then sprinkled with powdered sugar when they had cooled completely. BEAUTIFUL! (:

Chocolate Crackled Cookies

VERY good! I made a few changes ~ I used 2 sticks of butter instead of Crisco, substituted 1 cup flour for 1 cup quick-cooking oatmeal, and substituted the cocoa powder for 3 packets of sugar-free hot cocoa mix. Still came out great! Since the cocoa mix was quite sweet though, I cut the brown sugar down to one cup and omitted the granulated sugar completely. DELISH! I will definitely be making these again. (:
