Classic Peanut Butter Cookies

Reviewed: Jul. 8, 2014
I wasn't impressed either way with these cookies BUT the rest of the family can't get enough. They have nice texture with crunchy edges and a softer middle. Watch the baking time closely! Recipes was easy to make. I got 4 dozen nice sized cookies from walnut sized balls. After reading the reviews I did increase the flour and peanut butter. I'm not sure by how much I just used heaping measurements. I will make these again since they are almost gone already.

Best No-Bake Cheesecake

Reviewed: Jul. 17, 2012
Very easy recipe. Had no trouble getting mixture to thicken. Final product was very pretty. Very bland flavor, tastes like whipping cream. I used more lemon juice than the recipe called for and still bland and tasteless. Not worth the calories which is a shame since the finished pie is so pretty. Three stars based on ease of recipe and attractiveness of pie.

Pumpkin Cream Cheese Muffins

Reviewed: Nov. 16, 2011
Very good recipe. Fairly time consuming to make but quite good. I won't be making them regularly because of the time involved but will definitely keep the recipe. I followed recipe exactly as written. Next time I may experiment with the spices a bit and substitute brown sugar for the white in the batter.

Janet's Rich Banana Bread

Reviewed: Oct. 21, 2011
Bottom stuck badly, will flour pan next time. Made according to naples34102 modifications-creamed buttered with sugar tsp each of baking soda and powder. Added clove, allspice and cinnamon. Added a streusel topping of 3 TBS cold butter, heaping tablespoon of brown sugar, TBS white sugar and a TBS of flour and some cinnamon chopped until crumbly. VERY good flavor and moist! Did not rise in middle like so many recipes do. Looked just like picture. Trying next loaf now with half brown sugar, half white.

Extremely rich. Family loved it. I used evaporated milk and used the rest of the can in mashed potatoes

Overnight Coffee Cake

Reviewed: Apr. 7, 2009
This was a decent recipe. The cake was moist and the recipe was easy but the end product lacked a certain flair. I'll make it again but probably not often.

To Die For Blueberry Muffins

Reviewed: Apr. 7, 2009
Fabulous Muffins! I followed the recipe exactly except I used frozen blueberries and they were great. I've also made these muffins with chocolate chips. I have even made the muffin mix the night before, put it in the muffin tin in the refrigerator overnight and baked the muffins the next morning. They were still great. Great taste, easy recipe!

Three Cheese Garlic Scalloped Potatoes

Reviewed: Jul. 11, 2008
I served it to four people. One person hated it. One person loved it, two people said pretty good. I think it needs some tweaking. I'll make it again but make several changes.

World's Best Lasagna

Reviewed: Jul. 8, 2008
I used fresh basil and parsley. Next time I think I'll add a bit of oregano. I also added some provolone cheese between the layers. I ended up using more mozzarella and parmesan. I used the amounts of sugar and salt the recipe called listed.

Creamy Rice Pudding

Reviewed: Jul. 2, 2008
I have been trying for years to replicate the recipe for rice pudding that my elementary school served. This comes very close! I'll try it next time with a short grain rice as suggested.

Simple, Classic Chicken Potpie

Wonderful and easy. I put a top crust on the pie and sauteed the chicken. I did not have enough filling for two pies. Great leftovers.

Italian Pork Tenderloin

Easy and delicious. We could not find oil packed sundried tomatoes. We used the sundried in a package and soaked them in olive oil. We plan to add mushrooms and white wine next time.

Old Fashioned Peach Cobbler

Reviewed: Jun. 28, 2005
Wonderful. Patty had a good suggestion for making a lattice top. I added an extra cup of sugar to the peaches, a teaspoon of vanilla and a half cup of cornstarch. Next time, I'll use more starch. I also doubled the crust and put a whole crust on top.

Make Ahead Manicotti

A keeper. I used halved the number of shells, and the amount of ricotta and spinach. I added half a pound of sausage. I had plenty of sauce with one jar. A good make ahead dish.

Chocolate Caramel Cheesecake

Nothing spectacular about this recipe. Not worth the effort. I agree with others that the directions are a bit unclear. The caramel layer became too hard to cut through.

Caramel Popcorn

Reviewed: Jul. 21, 2004
Wow wow wow! I made a half batch and should have made a double batch! The neighbor is already begging for more. She wants to know if I'm going to put a prize in the bag because she swears it taste better than Cracker Jacks. I did bake for the whole hour. Stirring was tricky but just provided the perfect opportunities for taste testing. I wasn't sure whether to use light or dark corn syrup. I used light. A great recipe with just the right amount of sweetness and crunch. Next time I'll add nuts.
