Black Bean, Sausage, and Sweet Potato Soup

SO yummy!! I love anything with sweet potato. I used hot turkey sausage and took them out of the casing. I rolled them into mini meatballs and cooked them in some olive oil in a pan separately. I added them and the uncooked sweet potato at the end and cooked for about 20 minutes. I also used one can of black beans and one can of kidney beans. SO SO SO GOOD!!!!

Seven-Up® Cake II

Yummy! I did change this just a tad. I creamed the butter first and then added the sugar. Creamed those together for about 10 minutes. After adding the eggs, I added a tsp. of vanilla. The rest of the recipe was the same. Turned out great!!! I glazed the cake with a lemon-lime glaze (1 cup powdered sugar, few tsp of 7-up, a tsp of lemon extract) and garnished with some lemon and lime zest and some mint springs. Lovely!!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

WOW!!! A symphony of flavors in my mouth. First you catch the crispy of the fish (I baked it instead of frying it)...then comes the fresh lime and honey...and the kick of the chipotle at the end. SO GOOD!!! It stimulates all the parts of your taste buds...sweet, spicy, sour, salty, crispy, soft, etc. I'll definitely make this again...I didn't change anything about the ingredients...just changed the frying part.

YUMMY!!! I didn't miss the butter and fat in this at all!! Very cinnamon-y and very moist! Great recipe and very easy to make!

Roasted Red Pepper Vinaigrette

Yummy!! I used bottled roasted peppers and this turned out great! I drizzled over grilled romaine lettuce, pecans, and a little feta cheese. stayed good for a few days in the fridge!!

Sooo yummy! I agree with the other reviews that doubling the recipe is a good idea for a thicker piece of fudge. But the taste of this is incredible!!

Vegan Sun-Dried Tomato Pesto

This pesto was so yummy!!! And extremely easy to make. I mixed the pesto with some whole wheat pasta, topped it with chopped parsley and toasted pine!!!
