The Best Chicken Fried Steak

I bought good quality cube steaks at a local butcher shop but these turned out so chewy that we could hardly eat them! I checked the steaks and didn't see any obvious gristle. What did I do wrong?

Old World Poppy Seed Roll

Excellent! My mother and Slovak grandmother made this every year at Christmastime. They made poppy seed, apricot, and nut rolls using this same basic recipe, just substituting the filling.

Bacon and Potato Soup

It was pretty good as written, but why in the world would you get rid of all that yummy bacon grease and replace it with olive oil??? I know it's supposed to be healthier, but my grandparents both lived into their 90's eating bacon fat and/or lard nearly every day!

Easy Sausage Gravy and Biscuits

Great basic recipe. Much better if you make the biscuits from scratch, but this is pretty good. The only change I would make is to include some fried hash browns on top of the biscuit halves, then cover it all with the gravy. My grandmother always made biscuits & gravy this way. She called it a Haystack.

Cabbage Balushka or Cabbage and Noodles

My Grandma made this all the time when I was growing up. She started with a pound of bacon diced. Brown the bacon and remove it, SAVE the bacon grease. Next, saute the cabbage and onion in the bacon grease. Meanwhile, cook the noodles al dente, then drain and add in the bacon and cabbage/onion mixture! Not exactly the healthiest dish in the world, but she lived to be 93 years old. And, you know it's gotta be a good recipe when the directions start with "Brown a pound of bacon and SAVE the bacon grease"

Cabbage and Noodles

Actually, I think this is a Slovak recipe called "Haluski". It's probably the same in a lot of the Eastern European countries. My grandmother was Slovak. She made it with 1 head of cabbage, 1 lb. of bacon, and homemade egg noodles. She never would waste bacon grease by draining any of it, but I usually drain off half the grease. Also, cut up the bacon before frying it. I love this recipe, but only get to make it a couple times a year. My wife and kids will not touch it!
