Quinoa Cookies

I made these cookies following the recipe to a "T", with two small exceptions. I added about 1/2 cup of raisins and split the flour 50/50 with AP and organic whole wheat. They aren't the prettiest cookies, but they're quite tasty considering they have no eggs or butter. The texture is like a chewy muffin and I wouldn't recommend adding any more chocolate chips or sweeteners- they were plenty sweet for me. Going to freeze them as the recipe made 31 cookies! I will make these again.

Black Bean and Corn Salad II

Holy schmoly, this is a winner. I omitted the bell peppers because I don't care for them, and used boiled corn on the cob instead of frozen. It is so delicious! If I could improve one thing, it would be to add more avocado, perhaps increasing the amount to 2 whole avocados. All the same, I will be making this easy salad again and again.

Toddler Muffins

I've made this recipe countless times now, and like to double it, giving me 18 medium-sized muffins. I use baked butternut squash, and like to add raisins or cranberries. My 2 1/2 year old son loves them.

Best Brownies

Wow. Delicious! Made them in an 11x7 pyrex pan and added about 1/3 cup of chocolate chips. Cooked for 25 min. Came out perfect. Yum!!

Easy Banana Muffins

Slow-Cooked Chili

I just made this for the second time. I halved the recipe, but put in almost all the beans called for, the whole can of tomato sauce and an 8oz package of LightLife meat substitute (I am vegetarian). It was soooooo delicious. I still have some left in the refrigerator for the next few days. Great, simple recipe.

Apple Bread

I made a few small changes and it was delicious. I halved(ish) the recipe, meaning I put just over half of everything, to accommodate for the oddly-sized dish I used : a 1.5 quart Pyrex casserole. I used half white/half brown sugar, added 1/2 tsp vanilla and about 3/4 cup more apples than called for. Cooked at 300 for approx. 90 min (maybe a little less, I checked it every 10 minutes after 1 hour). It is so moist yet cooked thoroughly, and it looked so pretty in the cute little pan I used. Will definitely make again!

Cheese's Baked Macaroni and Cheese

Yum! I used about 1/4 of an onion, added 1 tsp. mustard powder to the cheese sauce, and did half & half bread crumbs/panko breading (about 3/4 cup total). I have never made homemade mac & cheese before, and I have to say, this one was pretty easy. It came out perfect, very tasty.... I really like the kielbasa flavor as well. Just reheated another portion in the microwave and it's just as good as it was right out of the oven, no texture issues at all. MMMMMM!
