Chewy Chocolate Chip Oatmeal Cookies

These were alright, nothing special. I followed the recipe almost exactly. I did use dark chocolate chips and chopped pecans instead of walnuts though. The recipe made 51 cookies. I'll be giving away a lot to "friends" at work.

Gyros

It was a little salty, but over all I give it a 5. It's really easy to make and it tastes really good. It's not the same stuff you'd get from a real Greek Restaurant, or a Gyro stand, so don't expect it to taste 100% authentic. I serve it with red onion, feta, tomato, cucumber and dill dressing on warm flat bread. I can almost smell the Mediterranean sea...mmmmmm

Chicken Pot Pie I

Fresh vegetables and home made onion soup make this a winner. As it is, it's not really even food. You might as well buy a frozen pie and not bother having to clean the kitchen afterwards.

J.P.'s Big Daddy Biscuits

I really wanted to make biscuits since I never had before and this Thanksgiving I am in charge of rolls and biscuits at my Wife's Grandmothers house. SO I needed some practice. I used cake/pastry flour and home made butter instead of shortening. Also, I didn't have a circular cutter so I just cut the dough into squares using an 8" chef's knife. Also, I believe that I over worked the dough which kept the biscuits from raising as much as I had hoped. The biscuits themselves tasted great. My kids loved them with honey and I thought they were perfect all by themselves. 5 stars for an easy and delicious recipe.

Outback Onion Soup

I always use chicken stock when I make this. I also only use 1 1/2 quarts of liquid. I add more pepper and salt, I also throw in some thyme, oregano, and rosemary. I add extra onions and use a little more flour and cheese too :D Basically I don't use this recipe. It's just reminder I suppose.

Broccoli Salad II

WARNING! Cut the vinegar in half! The flavor is good, but it's too watery. I subtracted the carrots onions and raisins and added celery slivered almonds and cranberries. I also used 12 oz of bacon in stead of 8.

Chicken Pot Pie IX

This was GOOD. I didn't put the celery in so I doubled the peas, and I used chicken thighs instead of breast but man oh man was it good. I'd rate it 10 stars if I could. The kids loved it too. I should add that I did not cook the vegetables and chicken for nearly as long as stated. If you boil vegetables for 15 minutes all the nutrition will be gone.

Butternut Squash Soup

This was my first attempt at making Butternut Squash Soup. I didn't have any Marjoram so I left it out. I also only used two VEGETABLE bullion cubes. And instead of cream cheese I used half a pint of organic heavy whipping cream. I also doubled the onion, subed coconut oil for the butter and added 2 cloves of garlic. And I also added a lot more red and black pepper. Oh yeah, and the squash only took about 5-10 minutes to cook.

Bacon-Roasted Chicken with Potatoes

I usually add onions and carrots and leave out the adobo seasoning. Also I use skinless boneless chicken thighs. Sometimes I use beef bacon. I find that it helps to cook the bacon a little before wrapping the chicken in it.

Banana and Peanut Butter Pancakes

I followed the recipe, mostly. I used organic whole wheat pastry flour and I sifted it. Then I substituted the milk with un-sweetened almond milk and cut it to 1 1/2 cups. I also used crunchy peanut butter. And I used one large banana with large-ish pieces. I spread some more peanut butter on top with some lyke's golden syrup. GOOD stuff

Baked Rice and Vegetables in Broth

Just like everyone else said, you really should cook the rice first. We ended up with some half-cooked rice We put baby spinach, broccoli, yellow onion, mushrooms and carrots in ours. No wild rice, or brown rice, and no bell pepper. The only seasonings we used were fresh ground black pepper and sea salt. My wife also used 50/50 milk/water instead of just water. The dish was very good over all and quite healthy since we used fresh vegetables. Our 3yo and 11mo really enjoyed it. I put red chilli sauce on mine and it made all the difference.
