Beet and Pomegranate Salad

I just made this recipe. I was unable to obtain a pomegranate, as they are out of season, so I substituted 1/4 cup of pomegranate juice (for a half recipe). This probably made the dressing a bit more watery than it would normally have been, plus it is missing the texture of the pomegranate seeds. So, with those changes, I have to say, this is a really good combination of ingredients. I have been experimenting a lot with dill lately, and I like it, and I am new to the world of liking beets, so I was pretty excited to get this recipe. If you like beets, this is really a great and unique change from pickled beets. I like the touch of sweetness that the honey adds and I am pretty sure I would like this dish even more with the pomegranate in it. Also, it is a gorgeous pink color, and would look beautiful on a holiday table!

Lemon Cream Cheese Frosting

This was exellent frosting - nicely lemony, nicely sweet, nicely cream cheesy. I actually had to add about an extra half cup of pwd. sugar to get the consistency I wanted. I don't think the sugar took away from the cream cheese flavor at all - it is actually a standard amount of sugar for a frosting recipe. I put it on a gingerbread, which is a wonderful complement.

Heavenly Chocolate Mousse

This is going to be incredible! I made it with peppermint stick coffee (Cameron's - leftover from Christmas), and the taste is to die for. But you won't want to. I'm serving it tomorrow night after ribs, corn salad and potato salad. It worked perfectly, and I was surprised at how the chocolate held together even when I added water to it. The wonders of butter!

Quinoa and Black Beans

Absolutely delicous, easy and extremely versatile. Since I discovered a tomato allergy, I have really missed having corn chips and salsa - this makes an excellent salsa substitute. It made a great side dish, and with any added meat, it makes a wonderful meal. Thank you thank you thank you. Oh, I used red Quinoa for the salsa, which made it darker.

Bacon Mustard Pork Roast with Stuffed Mushroom Caps

I was very disappointed. I don't know what I did wrong, if anything - seemed pretty simple, bacon, mushrooms, mustard, pork. Gotta say I LOVED the idea of slathering my pork in pork. But I didn't care for it. I used less than half the called-for mustard and it was still too mustardy. The mushrooms weren't good, either. Sad.

Cranberry Muffins

They didn't rise, were too tart, and not sweet enough even though I added an extra 2 T of sugar. Sure wish I'd read the other reviews. I don't know what the rising problem is all about, there is a Tablespoon of baking powder in here after all! One would think it would be enough! But, definitely more sugar, like 3/4 cup might do the trick. Really, it didn't seem like these should turn out as bad as they did. I love the flavor combination, but these just didn't work.
