I just made this recipe. I was unable to obtain a pomegranate, as they are out of season, so I substituted 1/4 cup of pomegranate juice (for a half recipe).
This probably made the dressing a bit more watery than it would normally have been, plus it is missing the texture of the pomegranate seeds.
So, with those changes, I have to say, this is a really good combination of ingredients. I have been experimenting a lot with dill lately, and I like it, and I am new to the world of liking beets, so I was pretty excited to get this recipe. If you like beets, this is really a great and unique change from pickled beets. I like the touch of sweetness that the honey adds and I am pretty sure I would like this dish even more with the pomegranate in it. Also, it is a gorgeous pink color, and would look beautiful on a holiday table!
