Roast Leg of Lamb with Rosemary

Very tasty for you lamb lovers! We added a squirt of lemon juice and 1 tbsp. balsalmic vinegar to the marinade. Baked the lamb with the marinade in an oven bag for 2 hours at 300 degrees. It was super tender! Took 2c of the fat drippings and cooked up a sauce with 1c. milk, 1tbsp cornstarch, rosemary twigs, and 1tsp balsalmic vinegar, salt/pepper to taste. A superb sauce/gravy for the lamb. We'll use this recipe again!

Apple Crisp II

This was a wonderful crowd pleasing dessert for our SB party. A few changes: I doubled the crumb mixture, used 6 large G.Smith apples (was a bit more that the 6 cups needed)and added 1 tsp almond extract to the sugar/cornstarch sauce. The extra apple or 2 is needed to fill a 9x13 pan. It turned out great and it's a keeper!

Italian Herb Bread I

Made bread sticks from this recipe for a SB party, to go with baked ziti. These were soooo good! Will make again, but will try the loaves next time. YUM YUM!

Angel Chicken Pasta

This was wonderful. My hubby and kids loved it. We doubled the sauce batch, but next time I will add only one salad dress mix pouch, and replace with my own seasonings. We served this over rice instead of pasta. Loved the flavor the white wine gave the sauce. Made excellent leftovers for the most flavorful chicken sandwiches. Thanks!

Chicken Pot Pie V

This was a wonderful pot pie. I added frozen broccoli, omitted the mixed veggies. Also didn't have the crm/chicken soup, so I had to make a creamy chicken soup sauce. Made my own pie crust recipe, and with all the fillings, we had enough to make 2 pies. One important note: I only had russet potatoes, and they absorbed all the juices in the pie when baked. Next time I will use ONLY red/new potatoes. The flavor was excellent, but a bit dry. (my fault). Will make this again. My kids even loved it! Will add green peas next time too.

Brisket with BBQ Sauce

This disappeared fast at our SB party. We had to make a few changes though. Had no liq. smoke, so we marinated it in olive oil, chopped onion, wine and balsalmic vinegar, and fresh rosemary. Cooked for 6 hrs, saved 2c of the fat drippings and made an awesome sauce/gravy with added brown mustard, hot sauce, minced garlic, and cornstarch. We made 10# and all was eaten. Our first time at brisket, and will do again!

Sausage Flowers

I made these for our SB party. Didn't have wonton wrappers, so I used some phyllo dough and made the squares only 2". Added an extra 1/2c of MJ cheese, and cooked them at 400 degrees. The buttery taste of the phyllo didn't interfere with the sausage mix. I will make this again, next time adding a few more ingredients and spices.

California Bean Dip

Used this at a SB party. Was pretty flavorful, but a bit runny. I thought it would be thicker. Used frozen corn instead of canned. Everyone loved it. Maybe next time add cream cheese or sour cream?

Sweet and Sour Chicken I

This is excellent! My hubby is picky about his asian cuisine, and he loved it! I made a few changes: I kept the chicken, veggies, and sauce in separate bowls for serving. Added 2 sliced carrots and 1/2 chopped onions to the green peppers and sauted them lightly. Added 2T soy sauce and the pineapple chunks to the s/s sauce. Next time I will double the sauce batch though. There wasn't enough for the amount of chicken pieces, for our tastes. Served this over white rice with side of egg rolls. A wonderful meal with awesome flavor. We're sold on this one! Also: the kids loved the leftover chicken pieces for lunch as chicken nuggets w/ ketchup! This is a keeper!!

Slow Cooker Taco Soup

A wonderful soup with zip! I didn't have chili beans, canned corn, diced tomatoes, or chili peppers on hand, so I added 2 cans Rotel, 4 large cloves of garlic, and a 16oz can of tomato sauce instead of an 8oz can. I found I needed to add 2 extra cups of water with some corn starch also, and some cumin and cilantro for extra seasoning. I cooked the grnd beef with the taco seasoning mix, and followed the pkg directions. We topped the soup with shredded cheese and sour cream, and had toasted flour tortillas on the side. It was excellent! My kids all had seconds and loved it! Will make again! Thank you for a great recipe.

Sweet Potato Pie I

Absolutely Ultimate Potato Soup

Excellent, flavorful soup! I didn't have any bacon on hand, so I sauted the celery and onion in olive oil. I also use corn starch instead of flour. This soup goes great with buttermilk biscuits! Have made this soup many times!

Italian Style Meatloaf I

This was very flavorful, but was a bit loose. We like a real firm meatloaf. I've made it many times but add 1/2 of the tomatoes and cheese, and add garlic cloves instead of garlic salt. I also do not cover the meatloaf in the oven. A very tasty meatloaf for the whole family.
