Hearty Vegetarian Lasagna

Made this last night for dinner. Followed the recipe exactly, but used Newmans Marinara instead of the Classico and used whole wheat noodles. It turned out ALRIGHT. Definitely way to much cheese. UPDATE: Ate for leftovers once and threw the whole thing away. This recipe needs some tweaking!

Avocado, Tomato and Mango Salsa

Soooo soo good! I used a jar of organic sliced mangos in a light juice which came to about two cups of mango. 1 large organic vine tomato and 1 organic small tomato. 1 whole organic jalapeño pepper. 1/2 cup organic cilantro. 1/2 teaspoon organic minced garlic ( = about 1 clove) . 1/2 teaspoon salt. 2 tablespoons lime juice. 1/2 cup organic chopped red onion. 1 tablespoon olive oil. I let it sit in the fridge for about half and hour and then drained some of the juice out. Turned out really tasty and well balanced in flavor.

Quick Eggplant Parmesan

GREAT! I made a few changes though. 1. Didnt have any egg, so I used a little mayo mixed with milk to dip my eggplant in. 2. Sliced my eggplant into 1/2 in rounds. 3. Set oven to 375 and baked slices till golden brown. 4. Made my own sauce made of crushed tomatoes, tomato paste, basil, oregano, garlic salt etc. 5. After slices were baked to a nice golden brown I pulled them out of the oven and THEN spooned my sauce and sprinkled mozzarella cheese on top. I found that doing it this way keeps the crusty outer parts of the eggplant crispy bc they aren't soaking in the sauce. My and my husband really liked this recipe.

Grilled Salmon with Avocado Dip

For my tastes this recipe calls for WAYYYYY TO MUCH DILL, so I cut the amount in half and it was still way to much! Since I didnt have any lemon pepper I just squeezed lemon onto the salmon and fresh ground black pepper, sprinkled a little garlic salt ontop as well...rubbed it into the steak. Put it in a foil packet and set in the fridge for about an hour. Baked in the oven at 375 for 20 minutes. Tasted okay... will use even less dill next time.

Broccoli Casserole

This casserole turned out great. I used all organic ingredients, skipped the chopped onion and used about a tablespoon of dry onion soup mix for extra flavor. I made this dish a second time and used cheddar broccoli soup instead...delicious as well!

Breaded Toasted Ravioli

So I totally didnt follow the recipe but I used it as a guide. I used a package of artichoke & Cheese Ravioli from Trader Joe's, whole wheat bread crumbs with garlic salt and italian seasoning added, and 2 eggs with a splash of milk. I dipped the ravioli in the eggs, dipped in bread crumb mix and then re-dipped in egg and bread mixture. I oiled a baking sheet with EVOO and let it warm up in the oven (400F) for a minute, pulled it out placed the ravioli on sheet and baked for 20 mins. YUM YUM

Cheesy Baked Potatoes

These turned out awesome! Used 2 VERY large red potatoes let them cool for about an hour and that made it way easier to scoop out. Skipped topping it with the remaining cheese and used turkey bacon and chives instead. YUM YUM

Roasted Garlic Lemon Broccoli

Tasty, tasty! I used garlic salt instead of minced garlic and salt. After I finished baking I squeezed a tad of lemon and tasted it. I can definitely see why some people would find this weird tasting...I added a small dollop of butter and that really made all the difference.

Spinach Stuffed Chicken Breasts

I followed this recipe exactly... Not very flavorful at all. I love love love feta and i really like cooked spinach and i like chicken...lol.. but I didnt like this. To be fair I give this a three because I think by adding some other ingredients to the mixture it might turn out better.

Mexican Rice II

I'm mexican/puerto rican and this is just how my mom and dad make it, minus the chicken broth and ground cumin. Usually my parents just use water and fresh cloves of garlic, onion and tomato sauce. I found this recipe to be a bit too salty though for my taste. Way more salty than what Ive come across in Mexican restaurants as well. I like the addition of broth, it definitely adds more flavor. I wouldn't change anything in this recipe except maybe using fresh minced garlic instead of garlic salt and salting to taste if needed. Thanks!

Quick and Easy Sauteed Spinach

I only had a 6oz bag of fresh spinach so I used a little over 1/2 a teaspoon of garlic salt....it was WAAAY to salty. Good! but salty... next time I know better to use less....

Creamy Pumpkin Pie

Similar to another recipe I used a couple weeks ago. I used 3 to 4 teaspoons of PUMPKIN PIE SPICE to replace all the other spices and I ended up using about 2 1/2 cups of mashed pumpkin. Last time I felt like it could have been a bit sweeter so I added a bit of honey to the mix. YUM YUM

Creamy Chicken and Wild Rice Soup

Turned out great! I made a few changes though. I did as some reviews suggested and added a few things... 1 cup shredded carrot, 1 cup celery and half a cup chopped onion. I sautee the mixture in 2 tablespoons oil in large pot until onion is translucent before adding the broth, water and chicken. Delicious!
