Double Chocolate Biscotti II

These are excellent! I added 1 1/2 tsp of red chili powder for a little kick. I also used mini chocolate chips instead of the chopped candy bar and I used pecans. I normally like my biscotti very crunchy and hard, but these are delicious. I gave these out as Christmas presents this year and they have been a big hit.

Pumpkin Seed Beer Brittle

I would definitely try this again with something other than pumpkin seeds. They were very chewy and I didn't care for them. I think this would be great with pecans or pine nuts.

Garlic Caesar Chicken Tenders

I marinated the chicken in some leftover Greek tztaziki sauce that I had and a squeeze of lemon juice. Then I breaded it in panko crumbs. It turned out very tender and good. It was very garlicky from the sauce.

Collard Greens and Beans

Better than expected! I added an extra can of beans and some chopped ham to make it a meal. It did turn out really salty, so I would recommend not adding any salt until you can taste it at the end (I added about 1/4 tsp during cooking). If you can find low-sodium bacon, go with that.

Aebleskiver (Danish Pancakes)

I thought this recipe was very good. I used half whole wheat flour and half white flour and doubled the recipe. I filled them with apricot jam and some with chocolate chips or nutella. Sprinkled them with a small amount of powdered sugar. All were very good. I will save this recipe and make again.

Quick and Easy Brownies

I halved the recipe to just make a few one evening. I baked them in a loaf pan for about 26 minutes and they turned out great. Moist and chewy. I did not have enough butter either, so I used 1/4 cup butter and 1/4 cup oil. Worked out great. Not quite chocolatey enough for my taste. I may add a bit more cocoa powder next time or add some chocolate chips.
