Fish Fillets Italiano

This is a WONDERFUL recipe and also looks appealing to the eye. I remember a TV Chef saying once "You taste it first with your eyes" and that's what made me try this recipe. It looks wonderful and it tastes great too. I did add some salt to it, but that's the only thing it needed. It is wonderful.

Missy's Lasagna

I agree with Josyln H. Don't review so harshly if you haven't even tried it. You could add polite suggestions but the "ew" part of one review was uncalled for. I, for example, do not like cottage cheese or bell pepper, so I simply wouldn't add it. I found the addition of bread crumbs to be inventive and I WILL try that. To another reviewer, the reason your noodles didn't cook is probably because you didn't buy the lasagna noodles which specify "No Cooking Needed". All in all, this is a delicious recipe and I believe the canned mushrooms were for ease in preparation so there is no need for slicing and sauteing. Missy, this recipe is wonderful. It's a nice change from the one I'd been making for years.

Lasagna-Stuffed Mushrooms

I made this for a friend when she was ill. She needs a gluten free diet & this seemd like just the thing. She LOVED it!! I did however change the cottage cheese to ricotta cheese because cottage cheese tastes Nothing like ricotta and is not a substitute for it in my Italian opinion. The only other thing that needs to be stated in the directions is to drain the ground beef after cooking before adding it to the cheese mixture. It gets rid of the fat that the beef rendered while cooking. It's an excellent tasty meal. Thank you for posting it!!!

Lasagna-Stuffed Mushrooms

I don't know why cottage cheese is used instead of Ricotta cheese. Cottage cheese to me is more of a substitute for cream cheese (same type of flavor). I used Ricotta cheese and it tasted wonderful. Also, after reading another review, I tried baking this on a rack to drain the mushrooms. It didn't work because I believe the mushrooms need to be on the pan for the full heat of the pan in order to cook. I wound up putting them in the microwave for a minute each because the mushrooms weren't cooked and then put them under the broiler with the sauce & cheese as indicated but this time without that rack. They did release a lot of juice, but I just poured it off. It was fine. 1 more thing: if you change the serving amt, do not change the eggs. i.e. if you want 6 servings, the "calculator" will triple all the ingredients. Do not put in 3 eggs. You still only need 1 egg. When I make regular lasagna I only use 1 egg regardless of whether I use 1, 2 or 3 lbs of ricotta. It's just there for the texture. 3 eggs would be FAR too much. Thanks for a great alternative to using pasta. My neighbor is disabled and I cook for her twice a month as a treat and a favor. She is on a gluten free diet & I was getting tired of just baking chickens with sides of rice & veggies. What a wonderful alternative this was. She LOVED it!! Thank you for posting it. Without the cottage cheese, I rate this 5 stars. It's a very delicious recipe!!!
