Ground Beef for Tacos

Reviewed: Nov. 29, 2003
Average recipe. Easy to make, but the pre-mixed taco seasoning has loads of salt. I would suggest making your own spice mixture and using that instead.

Banana-Oatmeal Bread

Reviewed: Oct. 12, 2003
A real keeper! I loved this recipe. I added a bit of lite sour cream. Nice and light and moist. I also used a muffin pan (makes about 15) and baked for just 20 minutes!

Kisses Peanut Butter Pie

Reviewed: Aug. 7, 2003
Delish! I used 1/3 less fat cream cheese and lite cool whip and the taste was great! I also used melted mr.goodbar pieces (just a few) in the crust. The crunch of the nuts was nice. My only complaint is the pie melted almost right out of the fridge. Maybe freeze and then serve next time!!?

Todd's Famous Blueberry Pancakes

Reviewed: Jun. 8, 2003
Very good basic recipe! I used fresh blueberries, but noted that a few more blueberries would have improved the recipe. I am not sure what waiting 1 hour does to the taste...any ideas? Also, the recipe as written serves just 2 (abt 3-4 pancakes each) so for a family be sure to double the recipe.

Golden Rum Cake

Reviewed: May 17, 2003
A hit at my office. I used less rum as many other reviewers suggested about 1/2 what the recipe called for. I used part parrot bay coconut rum and part dark. I also did not have a yellow cake mix so I used french vanilla instead and it worked out fine!!

I think there is a typo in the baking time. 1 1/2 hours will burn your dinner!

To Die For Blueberry Muffins

Reviewed: Feb. 16, 2003
Very tasty muffins. I used craisins instead of blueberries and they turned out great! You can also omit the topping if you are in a rush and just add a teas. of cinnamon into the batter!

Marinated Ranch Broiled Chicken

Reviewed: Feb. 15, 2003
A fast and easy recipe that gives good results. I felt more chicken could be added (about 4- 6 pieces). Great taste.

I marinated longer than 30 min and thought the flavor was OK, but wouldn't rush to make again. I broiled it as well.

American Lasagna

Reviewed: Feb. 5, 2003
Nice taste but the recipe didn't fit in my 9X13 pan!! There was too much so I ended up adding extra sauce and making a second smaller pan. This shouldn't be a problem in my opinion so next time I will search for a recipe that fits in one pan.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Jan. 11, 2003
Great cookie! I used regular shorting and cut back a bit on the fat and sugar by lowering the butter and sugar slightly. I also used craisins instead of raisins for a nice twist. They tasted great and would recommend them.

A very cakelike slightly sweet cookie. I got 4 dozen small cookies. I liked these but prefer a less cakelike texture.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Dec. 14, 2002
A nice recipe that makes a decent cookie. I cut back on the butter (for dietary reasons) and halfed the recipe with good results. Next time I will use chocolate pudding mix or pistachio for a different twist.

A good easy recipe. I always reduce the fat content by adding a few tbs less shorting and marg. and they always taste the same. I also added some vanilla (about 1/2 teas.).

Double Layer Pumpkin Cheesecake

Reviewed: Nov. 30, 2002
A good recipe for thanksgiving! I adjusted the spices to my taste and increased the nutmeg (1/2 t) and cloves (1/4). I also used the whole can of pumpkin puree! I didn't know what to do with the other half and I doubled the recipe so it worked out well!
