Easy Slow Cooker French Dip

Yum! I read many of the reviews. I doubled the recipe, used 8 lb rump roast (perfect consistancy), beef stock (est 20 oz), 1 can of cond. french onion soup, some diced fresh roosemary, 1.5 bottles of beer, some black pepper and garlic powder on top. Cooked overnight for ewst 8 hr, let cool & refrigerate. Turned crock pot back on day of event on high & all was ready to go in 3.5 hr. Delicious & a big hit!

Double Chocolate Mocha Trifle

Easy recipe...used french vanilla pudding since the store didn't have white chocolate. I used skim milk & it was thick, but ok once I added in the Cool Whip. I think a little more pudding filling would be better to get a full three layers. I used six Heath bars, that were easy to cut after refrigerated, for three layers & combined w/shaved chocolate on the top. It was a hit at our lunchtime after-Christmas family gathering.

Roasted Brussels Sprouts

SOOOOOOOOOOOOOO Good! Yummy! I could snack on these like a handful of nuts. We also removed the center core when we roasted them.

Baked Ziti IV

Definitely THEEE best ziti recipe out there! Great mix of flavors w/ diff meats & thyme! I highly suggest Alessio's sauce (PA based co) - yum!

Chicken Florentine Casserole

I thought the flavor was great but a little too rich. I followed the advise of some reviewers: I sauteed fresh mushrooms and spinach (2 bags baby spinach), placed on the bottom of the casserole dish. Then I sauteed cubed chicken (I'd use at least 5-6 breasts next time) in the same pan until it was moslty cooked, placing the chicken in the casserole. I splashed in some white wine during these first two steps. I then made the sauce (directions # 3 in recipe), but will use fat free half-n-half next time. Baked the casserole for 25 min, then back in oven with crumbled real bacon & mozzarella on the top; this added a good flavor, but I see no need for the mozzarella - it was good, but it's just such a rich dish. I may melt SmartBalance w/ breadcrumbs next time on top w/crumbled bacon.
