Spicy Orange Chicken Wing Sauce

I cooked the chicken wings my usual way- barely seasoned and naked on a lipped cookie sheet in the oven at 425 for about an hour. Then I made this sauce and tossed the wings. I made it basically EXACTLY as stated except used half the amount of sriracha- for the kids sake (but we had a bottle at the table for us). This is a really great recipe! I looked at it in the pan and thought it did not look like much so I doubled it. MISTAKE. A little goes a long way of this stuff! Oh well, I will just use the leftovers for a slow cooker meal I think. (shredded orange chicken breast, anyone??) Seriously finger lickin' deliciousness.

Lemony Turkey Rice Soup

Good soup- I used turkey stock from the roasted turkey and the leftover meat. Used parsley instead of cilantro. I didn't have to salt it because I had brined the bird and the stock was already salty. I also used uncooked rice and cooked in stock before adding anything else for 30 minutes. All I did was add another cup and a half of water for the rice to soak up. Easy and wholesome!

Rhubarb Strawberry Crunch

I followed the recipe exactly and I think it had too much flour. Besides that it was very good, but next time I will only use 3/4 cup flour and maybe even increase the butter a little.

Citrus Turkey Brine

I increased the salt, which I think may have been a mistake. I would stick to the recipe on that one if I were you. I brought all the ingredients to a boil with some water in a pot first and then let cool before I added to the turkey in a larger bucket with some more water. This helps to bring out the flavors. I also added a little rice vinegar and used whole peppercorns instead of ground pepper. Good recipe for a springtime bird! Brining is a MUST.

Penne with Chicken and Asparagus

Very simple and delicious! This was plenty to feed my family of 5 as a main course. I did add the mushrooms, which are in the picture, but strangely not in the recipe. I used more garlic and more parm than it called for in the recipe which gave it more flavor. Besides that I followed the recipe and it came out perfect. Keeper!

Pecan Breaded Chicken Breasts

really nice alternative to my usual southern style fried chicken. Try to get the pecans chopped up pretty fine so they stick well. Very tasty!

Unstuffed Cabbage

Spicy Slow Cooker Black Bean Soup

Pretty good but a little watery. Do NOT increase liquid- if anything decrease it a little bit. I also took some out and blended it up to make it a little thicker. Pretty good soup.

Crumb-Coated Chicken Thighs

Easy peasy lemon squeezy. I changed it up a bit- OF COURSE- here's what I did. Doubled the recipe, added into the mix a little flour, subtracted cumin and curry, added 3 kinds of paprika including piment d'esplete and smoked spanish, cayenne and chili powder, garlic powder and a bit of oregano. I soaked the thighs in a bowl of milk for 30 minutes and then dropped them one by one into the mix and tossed them around a bit before putting them in a pan that I had brushed with olive oil. I then used the brush to dab a little olive oil on top of the pieces- I need to get a mister! I also cooked at a slightly higher temp for slightly shorter time which helped seal in the juices. Rave reviews at the dinner table!!

Guava Chiffon Cake

Please use cake flour instead of all-purpose. At least half the quantity. Also, did not use red food coloring- no reason to make it schmancy for internal use. However for a party that would be festive! Delicious! I frosted with a pineapple-cream cheese frosting, which was delicious, but I would like to try with guava glaze and whipped cream like some other reviewers.
