About this Cook
I was an at-home mom for 14 years, I loved to plan and prepare delicious meals for my little family (1 son and 1 husband!). Now that I'm cooking for just two, I like quick and easy meals, although I still cook most things from scratch.
My favorite things to cook
chicken, fish, beef, all kinds of potatoes, lots of fresh veggies, anything in the crock pot, desserts especially baked goods.
My favorite family cooking traditions
My husband and I always cook Thanksgiving and Christmas dinners together; we love spending all day in the kitchen cooking up the foods we love on those days.
My cooking triumphs
I held a BBQ for over 40 friends serving tri-tip, grilled potato halves, grilled vegetables, a raspberry walnut vinagarette salad and home made french bread rolls. It was a hit and everyone raved over my blueberry cheesecake dessert!
My cooking tragedies
I once baked a 4-layer german chocolate cake from scratch as a birthday surprise for my husband who loves german chocolate cake. I ran to the store for more pecans for the frosting, and when I got back, the dogs had gotten into the cake! Both my husband and I wanted to cry! I was able to save half of it, so I made two layers by matching the untouched halves, frosted it and served it with candles blazing- so it wasn't a total loss.

Yummy Honey Chicken Kabobs
Wonderful flavor, tender and juicy. I substituted kariyaki sauce for the soy sauce to give it an asian kick. Will make this often.

Costas French Market Doughnuts (Beignets)
I followed the recipe exactly and they turned out beautifully! Served them Christmas morning and my husband said he liked mine BETTER than the ones at Cafe du Monde! These are going to be an annual tradition in our family for Christmas from now on. The recipe as written makes a LOT of dough- I divided it into four balls and froze three and baked one into the beignets. The next week I thawed another ball of dough and rolled it out and made more beignets and they were as good as the first ones! The dough freezes beautifully. Just thaw for a few hours at room temperature in the plastic bag.

Cocktail Meatballs
I didn't have bread or cracker crumbs or even cornflake crumbs so I substituted finely ground oatmeal that I ground in my food processor. The meatballs turned out nice and moist and the sauce is to die for! Great hit at the church supper!
