Heavenly 'Apple of My Thigh' Dessert

Easy and wonderful. Cut the sugar in half and use Fruit Fresh (found in the canning section of the grocery store), to keep the apples from browning. Everyone at my party ate this, and everyone asked for the recipe.

Penne with Shrimp

Bravo! This was easy, fast, tasty and healthy. I only gave 4 stars beacause I made it using the modifications recommended by Sky, plus a couple of my own. I doubled the garlic, onion and wine. I added 1/2 t dried basil and 1/8 t red pepper flakes (for a half recipe) to the garlic and onion before adding the wine. I used tomatoes that were already flavored with garlic and sweet onion and chopped them up more in the food processor (a few pulses). My sauce tasted a bit too acidic, so I added just a tiny pinch of sugar to balance it out. Served with a simple garlic toast & a bag salad mix--easiest dinner of the week!

Great Grilled Smoky Vegetables with Avocado and Goat Cheese Crumbles

We grill veggies a lot, but last night I wanted something different and a little more special--I was not disappointed with this recipe. I used 3 mushroom caps halved, two red bell peppers quartered about 3/4 of a medium red onion, 8 or so asparagus stalks and a large avocado. Just about perfect for 4 large helpings. I may have not used the full amount of goat's cheese, but rather sprinkled it over the platter of vegetables until I was satisfied with the presentation. Also, we grilled the veggies for about 15 minutes on the top shelf of the grill--they would have been underdone at 5 min.

Grilled Chicken Salad with Seasonal Fruit

This salad is easy, yummy and pretty, but I just couldn't put all of that sugar in (I think I put in about half) and be careful not to overdo it on the onion. I used the amount of onion called for, but maybe the onion I used was larger than average? Also about 1/8 teaspoon of Cayenne, gave a tiny little kick that I really liked.
