Chinese Cabbage Salad I

Great recipe although I did make some of the adjustments suggested by other reviewers. I decreased the oil to 1/3 cup and decreased the sugar to 1/4 cup. I also added a tablespoon of sesame oil. All of my friends devoured this salad and absolutely raved about it.

Chicken and Red Wine Sauce

Very good recipe provided you make some of the adjustments suggested in the comments. I rubbed the chicken with paprika, salt, and pepper before doing anything and let it sit then I sauteed onions, mushrooms, and garlic first and removed them before adding the chicken. I cooked the chicken for about 5 minutes per side because it will continue to cook when simmering. I used a little less than 1/4 cup of brown sugar (and it could have used even less, maybe just a few tablespoons!), added the vegetables back in, and added 1/2 cup wine. After simmering covered for about 15 minutes I thickened the sauce with about a tablespoon of cornstarch. The wine soaked mushrooms and onions were addictive and the chicken was moist and very flavorful. Went well with roasted potatoes and carrots.

Roasted Yam and Kale Salad

The contrast between the kale, the caramelized onions, and the sweet potatoes (the difference between sweet potatoes and yams is negligible in my mind) is fantastic! The flavors really compliment each other and make this simple dish really complex. My roommate wasn't a fan (he's decided he doesn't like kale), but he still picked out the sweet potatoes and ate all of those. I'll definitely be making this dish again, though for just me next time which means I get it eat it all!

Pork Roast With The World's Best Pork Loin Rub

This rub is fantastic, I'm definitely keeping this recipe! Super adaptable too, I didn't have dried mustard or garlic powder, so I just stuffed chopped garlic in a few slits in the pork and rubbed it with a few teaspoons of prepared dijon mustard before putting on the spice rub.

Chicken In Coconut Sauce

Great base for a recipe, but it needs more vegetables! I diced 2 chicken breasts and took the advice of another reviewer and used coconut milk instead of cream of coconut. I also added mushrooms and diced red pepper. So good, my roommate said it tasted like something she would get at her favorite Thai restaurant back home!

Andy's Spicy Green Chile Pork

This pork made the BEST tacos I have ever made at home. I substituted 2 Jalapenos for the serrano chilis because that's what I had. The only other change I made was to add 2 bell peppers about halfway through cooking, mainly because I wanted peppers with my tacos and didn't want to cook them separately! Served with black beans, corn, and fresh salsa (from another recipe on this site), delicious!

Black Bean and Couscous Salad

A very healthy and delicious side dish! I only used 1 can of black beans and an entire can of corn. I didn't have any red wine vinegar, but I did have apple cider vinegar, so I used that instead. Turned out delicious!

Spicy Vegan Potato Curry

Definitely a restaurant worthy recipe! This was my first attempt at making curry and it was fabulous! Try using red skin potatoes (you'll want to use 5 or 6 since they tend to be smaller), their flavor is really excellent in combination with the spices!

Baked Lemon Chicken with Mushroom Sauce

A fabulous and simple recipe that I was happy to make on a normal weeknight but would have been delicious enough to serve to company! I cut the chicken and mushrooms down since there are only 2 of us and kept the sauce the same so we would have extra for our rice. If I was making the full recipe I think I would increase the sauce significantly. Also, I ended up using quite a bit more chicken broth than the recipe stated.

Slow Cooker Chicken and Dumplings

Very yummy! I can't wait to eat the leftovers for lunch tomorrow! I took the advice of another reviewer and only used 1 package of biscuits as well as using cream of chicken and cream of mushroom soup and 2 cans of mixed veggies. It all tasted sooo good and was super easy. Definitely cook the biscuits for more than 30 minutes, I cooked them for about an hour and I thought they were just the right dumpling consistency.

Italian Chicken and Chickpeas

Absolutely awesome recipe. We're trying to cut down on our meat intake and amp up the veggies so I only used 2 chicken breasts (though they were on the big side) and cubed them then added mushrooms and spinach as well. The ratio of ingredients was perfect that way and I couldn't have wanted more chicken! This recipe is definitely a keeper with or without the tweaks!

Cuban Pork

A great recipe, I really enjoyed it. I tried this with chicken instead of pork (it's what I had) and it turned out quite good. I increased the amount of olive oil and nixed the salt as a number of other reviewers suggested. I think I would increase the cumin and garlic a bit next time as well.

Indian Peanut Stew

I'm glad the other reviewers were right, this recipe was an unexpected combination, but quite delicious. I made a few changes though, I added chickpeas as someone else suggested and I think next time I will cut down the peanut butter by almost half. It overpowers the tomatoes a bit more than I would have liked.
