Sweet Potato Souffle I

This is wonderful! I substituted Splenda for the sugar, egg substitute for the eggs, and omitted the coconut altogether. Thumbs up for all of the changes except the egg substitute, which made it too runny. The kids will think it's a dessert and you'll know it's really sugar free. My husband, who doesn't eat ANY veggies, loves this. I highly recommend this for anyone. Because of this recipe, I always bring the sweet potatoes at Thanksgiving!

Baked Scallops

I'm not sure if I did something wrong (this was my first time making scallops), but these didn't turn out all that great. The texture was fabulous, but the flavor just left a weird aftertaste in my mouth. Not recommended.

Autumn Squash Casserole

Absolutely awesome! The whole family loved it! Squash is hard to peel (this was my 1st time) & the only way I found to make it any easier was to have my husband cut it into small pieces and then I peeled them. I put it together the night before, but didn't cook it until about an hour before the event. It came out awesome!!

Wisconsin Five-Cheese Bake

I made this for the '10 Thanksgiving feast. I ended up forgetting the provolone cheese at the store & when I went back, I couldn't find any at all, so I used a 4-cheese blend that had most of the other cheeses in it. I'm not sure if my change caused it or not, but it ended up coming out kind of dry. I'm going to try it one more time with the right cheeses, then I'll repost. It had a really good flavor to it, but just needed to be a little bit creamier.

Creamy Sweet Corn

This just makes regular corn taste like sweet cream corn. It does do a good job of that, but unless something is preventing you why not just buy the already done stuff? Good flavor, just don't really see much use for it.

Kitty Litter Cake

Absolutely Hilarious! It looks way too real & most people get eebie-jeebies at first, but once they taste it they can't stop! It is a divine recipe that will be the hit of the party. It was my brother's 21st birthday cake; he got a real kick out of it. Enjoy! You won't be sorry!

Bacon and Roquefort Stuffed Burgers

Yummy! These burgers are huge! We used cheddar cheese in place of the Roquefort. We also browned them stove top and finished them in the oven. These will definitely make it into regular rotation. Thank you!
