Mexican Style Shredded Pork
I've made this twice - the first time I used a can of chipotles in adobo sauce instead of the chipotle sauce, and it was great. Then I tried it as written last night - again, great. After it was cooked I put some of the shredded pork into a frying pan and crisped it up, creating carnitas. Crispy, yummy good and we'll use the leftovers in burritos with the rice. Like the rice so much it's how I prepare it now.

Pesto Turkey Burgers
I've been making this for the last couple of years and it's a family favorite. I make up a big batch and freeze some, then thaw and cook. I sometimes sub a rice or corn cereal for the bread crumbs due to a gluten allergy in the family. Regardless, they are always delicious!

Bada Bing Bada Banged Potatoes
These are totally worth the work! I happened to have shaved parmesan instead of grated, and it made the most delicious little brown bits on the bottom of the pan. Our new favorite potato recipe!
