Cara's Moroccan Stew

We love this stew. Very similar to Medici's in Hyde Park/Chicago. I've made it for both meat-eaters and vegans; loved equally by both. We serve with a side of baked pita. I make a few changes: 1) Increase tomatoes to 15 oz can 2) Reduce cinnamon to 1/2 teas. 3) Add additional spices to menu: 1/2 teas. turmeric, 1 teas. curry powder, 1/2 teas. oregano

Make Ahead French Toast

Made it for Easter brunch & it was a hit. I made a few modifications: 1) reduced half & half to 1/2 cup, not 1 cup 2) reduced brown sugar to 3/4 cup. It was still very sweet .... next time I'll reduce it to 2/3 cup. 3) I did not dip the bread slices, instead I poured the egg mixture over the bread. 4) I did spray the pan with PAM before adding the bread and I did flip the bread the before baking. I did not have problems with sticking. I prepared this at 7:00 pm, but wasn't planning to bake until noon the next day. I was concerned it would be too long, but it was fine.

Strawberry and Feta Salad

A good salad when serving guests who are picky eaters & prefer to avoid anything green. If you are accustomed to lots of veggies & vinegar in your salad, you may find this a bit sweet. Overall, a good recipe with the appropriate pairings.

Red Bean Salad with Feta and Peppers

This is a good recipe for an everyday meal. I will probably make again when I need to use up some cabbage. I would serve this only to family; I would not serve to guests. OK, but boring.

Kofta Kebabs

Excellent. I am currently on a cleanse and this recipe qualified with the ingredients. Bursting with flavor. Next time, when not on a cleanse, I'll try serving with a greek yogurt/mint sauce on the side.

Curried Mustard Greens with Kidney Beans

Loved this. I had kale and swiss chard in my garden, so substituted with a mix of both for the mustard greens. This is a very satisfying dish that would appeal to vegetarians or meat-eaters. Hearty dish.

Chicken Tikka Masala

Like others, I reduced salt to 2 teas total and reduced cumin by 1/2 teas in both marinade and the sauce and added 1/2 teas of fenugreek to both marinade & sauce. Also, substituted ghee for oil/butter. I made the first time for guests....it was a hit. Served with Indian Saffron Rice and naan.

Carrot Cake III

I made a half batch and baked in an 8x8" pan. Everyone loved it. It is much lighter than most dense/heavy carrot cakes.

Peppy's Pita Bread
