Pasta Primavera Sauce

Reviewed: Aug. 15, 2011
This is my first review. This was awesome! I used frozed carrotts & broccoli and still it was great. I like my sauces kind of sweet so I used a tablespoon of sugar. Will definitely use again and again. Thanks for the great recipe!

Spicy Garlic Lime Chicken

Reviewed: Feb. 19, 2012
Funny this should be the featured recipe today because I just prepared it yesterday. It is awesome and can be cooked in the oven. I followed baking advise from another reviewer (jsecret) and it was great for easy clean-up. Otherwise followed it as is written and it was soooo good. Will definitely be making again.

German Apple Cake I

Reviewed: Mar. 25, 2012
I saw this picture and knew immediately it was the cake my paternal grandmother used to bake. I had always wanted to bake it but did not know what it was called. I made it exactly as the recipe states and it was absolutely heavenly. My son who is on a strict, self-imposed diet could not resist it from the first bite. In my opinion it does not need any kind of frosting, glazing, dusting or anything else to enhance it. I will however, next time, try reducing oil and sugar with the applesauce and brown sugar recommendations but, I always like to try as written for review purposes. Way too much said....lol, cake is awesome, thanks for the wonderful recipe!

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Jul. 1, 2012
This recipe rocks! I've made it twice once in the oven and the second on my stove top. I didn't get to marinade it for the full 6-8 hrs. but it didn't matter, it tasted awesome, this is better than the fish tacos I've had in restaurants, they could use this recipe! The only change I made to the ingredients was in the dressing didn't have the adobo sauce so used Louisiana hot sauce. I also cut it down to 1/4 cup and oh my it was still really spicy, can't imagine the heat with adobo sauce and using a half cup, you have to like insane heat to use the full amount called out, I loved it though. Will definitely be making this often. Thanks for an awesome recipe!

Rich Chocolate Frosting

Reviewed: Aug. 3, 2012
Another reviewer said her husband wanted a bowl of this for his birthday, I can see why! This is the best frosting I've ever tasted and I've been around for a while...lol! I followed everyone else's advice and halved the recipe & also followed another's advice to use 3 cups sugar to everyone 1 cup butter and she was spot on. The sweetness to chocolate ratio is perfect and I will never use another frosting recipe again! This is the best. I made this for the first time for two nine year olds, I used one to test the frosting and his eyes bugged out and he said "yum!" and wanted to know when could he have some cake! I used the crazy cake recipe from this site and after eating the cake he told me he didn't like chocolate before but he loves it now and this is the best cake & frosting he'd ever had! Thank you, you Amy, you made me a hero today!

Crazy Cake

Reviewed: Aug. 6, 2012
A neighbor of ours taught my mother how to make this cake back in the 70's, the only difference is that it was made in an iron skillet. I remembered it the other day and searched for the recipe on this site and low and behold here it was. I remembered the ingredients just didn't know the quantities. I made it for two 9 yr. old's and they loved it. One boy told me that he didn't like chocolate but after trying this cake,, he'd changed his mind. He said it was the best cake he'd ever eaten. The cake was moist and rich and just as wonderful as I remembered it from when I was a kid. Thank you so much for the recipe, it's definitely going be the only chocolate cake recipe I use! I frosted it with the rich chocolate frosting from this site and it really was just phenomenal.

Quinoa Chili

Reviewed: Oct. 1, 2012
This is definitely a very tasty chili. I made it exatly as called out the 1st time and thought it was really good. Since then I've made it many more times and have made some changes only to suit my own personal preferences. I either eliminate the bell peppers all together or substitute with sweet petite's. I just don't care for the texture of peppers. I also leave out the jalapeno, again texture issue and add a 15 oz. can of Hunt's sweet onion tomatoes, this really helps to compliment the little bit of heat of the chili.I try to always use fresh corn and always add some cayene pepper along with the black pepper. When the chili is done I always add several dashes of jalapeno flavored tobasco sauce. This really spices up the flavors. I don't add the quinoa to the chili and make cornbread for some family & friends who have that preference, and everyone makes there individual servings. As well, the cilantro is added individually per preference. Wonderful chili!

Chicken Tortilla Soup V

Reviewed: Nov. 13, 2012
I made this yesterday with only a few minor changes, in trying to keep with the true essence of the recipe. Instead of cooking the two chicken breast I shredded half a rotisserie chicken using both the dark & white side. I did sautee the onion and garlic in olive oil separately and added them to the soup mixture. I increased the broth to a 48 oz. container and used a 10oz. can of mild Rotel tomates with green chiles for the salsa and added a 15 oz. can of well rinsed black beans. Additionally I mixed a tablespoon of cornstarch with two tablespoons of water and added it to the soup, just to thicken it up a bit. Lastly, I omitted the lemon juice from the soup but cut up a lime and avacado and served them on the side, along with the tortilla chips to be used as desired individually. I think this was one of the most flavorful soups I've ever made. Thank you so much for the wonderful recipe!

World's Best Pasta Sauce!

Reviewed: Feb. 24, 2014
This really is the Best Pasta Sauce...with that being said I did change it just a smidge to suit my taste. Used red wine for the water and added a 1/2 teaspoon of oregano...other than that I wouldn't change a thing. This is my permanent go to pasta sauce. Thanks Johnchandler for the awesome recipe.

Slow Cooker Pinto Beans

Reviewed: May 8, 2014
I've made this several times, today for the 1st time I did it on the stove top. I had not soaked my beans overnight but, fear not there is a solution, I just brought them to a boil in about 5 inches of water and then turned off the heat and let them soak for an hour. After that time I poured out the water and started the recipe. Instead of ham I used two ham hocks and no lard. I used a 48oz. box of chicken broth and after some of that juice had boiled down I added an additional 32oz. box of vegetable broth. I also noticed that I inadvertently used only 1tsp. of the oregano and thought the beans tasted great. This will undoubtedly be my go to recipe from now on.

Mom's Best Meatloaf

Reviewed: Jan. 31, 2013
I've made this recipe many times and it is my go to meatloaf recipe. Recently I experimented with it and added one can of condensed tomato soup to the recipe and found that it made the meatloaf more moist and it still retained it's "loaf" consistency, and as well, it enhanced the flavor. I also added just a dash of cayenne pepper which only gave it a little more depth but did not set your mouth on fire. Very tasty, thank you for this very nice recipe.
