Ranch Dressing II

Made this exactly as written. It's very thick, like a dip not a dressing, so I had to add a good amount of milk to thin it out. It is good, but for my taste there is way too much dill in it. Will make again but cut it to 1/4 teaspoon. With those adjustments I think it would be a 4+ rating.

Classic Macaroni Salad

This is the best macaroni salad I have ever eaten. I have made it several times now but somehow keep forgetting to rate it! The thing I love the best about this recipe is that it is not swimming in mayo. Too many macaroni/potato salads are and I don't care for them at all. The only thing I change is to cut down on the sugar a bit. It's fine with the full amount but just a little too sweet for my taste. Also, it tastes even better if you make it the day before you plan on serving it. So yummy!

Milky Way® Cupcake Icing

I'm not a frosting lover...I'd rather eat cake plain than frosted but can't do that when baking for others. This frosting is so sweet but soooo good! I paired it with the Simple White Cake recipe from this site and it was the perfect balance because the cake wasn't too sweet. I was able to frost 22 cupcakes with one batch of frosting, probably because I frosted them with a knife and wasn't too generous with it because it was so sweet. Make sure that your cupcakes are cooled as well as the frosting. So good, and so easy to make!

Simple White Cake

Oh my WORD were these ever good! I made cupcakes. I love that they are dense and not too sweet. The only thing I did per other reviews was to add a little more milk. I just eyeballed it but it was probably close to an additional 1/4 cup. They tasted great the night I made them but were even better the next day. I frosted them with the Milky Way Cupcake Frosting recipe from this site and they were awesome!

Brooke's Best Bombshell Brownies

These are good, but very sweet. Based on other reviews, I used 1 cup light brown sugar and 2 cups fine white sugar. I used mini chocolate chips, not quite 1 cup, and threw in about 1/2 cup of walnuts. I have a pan that makes 12 square cupcakes so I used that and they baked up perfectly. I forgot to set the timer so I don't know exactly how long they cooked for...my guess is about 30 minutes. I think next time I will cut down on the sugar overall and see how they come out.

Rempel Family Meatloaf

This was very good. I made exactly as written, and the only thing I would change is cutting back on the steak sauce, and that's only because I am not a fan of it and the flavor was pronounced in the meatloaf. I think if I used only 1T it would be fine for my taste, but if you like that flavor then I'm sure the full amount would be fine for you. It was very moist! Will definitely make it again.

Garlic Cheese Chicken Rollups

These are delicious! I made exactly has written except that I didn't have whole chicken breasts, only chicken tenders so I used them instead (I didn't use toothpicks) but cooked for the same amount of time as it called for. I made the Garlic Spread recipe from AR for the filling since I couldn't find it at the store. That is yummy too! Both recipes are so easy to make and I will definitely be making them again.

Garlic Spread

This is yummy! I originally made it for the recipe on AR for Garlic Cheese Chicken Rollups, but the leftovers will have no problem being used up on various things. I made it exactly as written and it's the perfect balance of flavors to me, but for an extra throw in another clove or two of garlic!

Slider-Style Mini Burgers

These were okay. I made them as is and they were greasy even though I drained the beef really well. I think it was because of the amount of cheese involved. They also weren't too flavorful. I tasted the meat with just the soup mix in it and it was great, but once I added the cheese and mayo it took away that flavor. I like the slider concept so I may try them again but tweak the recipe a bit.

Strawberry Fruit Dip

I got this recipe from a friend and have made it several times now over the years and it's always a hit. It's a tad sweet, but you are in control when it comes to how much you dip. My favorite fruit to dip is strawberries, but I have used several different types of fruit.

Taco Casserole

This was really good! The only thing I did to alter the recipe was to use fresh roma tomatoes instead of canned tomatoes. The only other change I might make is to leave off the chips until the dish comes out of the oven. They were a little chewy, not crunchy, and the cheese made them stick together so it was hard to get the taste of them in every bite. 3/11/12 - UPDATE: I have made this several times now and each time I have used roma tomatoes, but I had a can of diced tomatoes that I wanted to use before it went bad so I used them (like the recipe calls for), and I must say that this dish comes out even better with them. I was surprised...I like to use fresh whenever possible, but something about the canned made it so much better so I will make it this way from now on.

Eat Michigan Salad

This was very, very good, but in the future I will use less vinegar. It was too tangy for me when I made it as written so I had to add more syrup and a little more sugar. It helped a bit, but I think decreasing the amount of vinegar will solve the issue. I mixed butter with romaine lettuces to give it a little crunch, and I didn't think I would like the goat cheese but was pleasantly surprised, and it goes really well with the apples and cherries. Made the Sugar Coated Pecans recipe from this site to go on top. I'll definitely be making this again!

Sugar Coated Pecans

These are delicious and so easy to make! The only change I made per other reviews was to increase the cinnamon to 1 teaspoon. I buttered my cookie sheet really well and stirred the nuts every 15 minutes and had no problems with either sticking or burning. I used them on the Eat Michigan Salad from this site but they are yummy just to munch on!

Dad's Hamburger Gravy

This was pretty good, but I think for personal taste I would use less ground beef next time. I missed the creaminess like you get with sausage gravy (I even added extra milk), but maybe it's not supposed to be like that? At any rate, it was good with that exception. Next time I might add a piece of crumbled bacon to give it a little twist on flavor.

Country Apple Dumplings

These were very good. I did modify based on other reviews so that is the reason for only 4 stars. I only used 1/2 c butter and used 3/4 c brown and 1/4 c white sugar. Next time around I may use even less sugar. Also only used about 1/2 the can of Mountain Dew. I made some with Sprite too but think that the Mt. Dew gives it a better flavor. Regarding the modifications I made, I am so glad I did. It would have been too sweet and also greasy, and as it was, midway into the baking I took some of the liquid out because it was swimming in it, even with the reduced amounts that I used. In the end they weren't soggy, but soft, but I wasn't expecting a hard crust like a pie anyway so it was fine. I put 2 in a bowl and put 1 scoop of vanilla ice cream on top and it turned out real well. Will definitely make again with some additional tweaking!

Sweet and Tart Strawberry Salad

This was really good! I experimented with both regular and black cherry balsamic vinegars and liked both. The only thing I think I might reduce is the pepper. It was a little too much for my taste, but I think I'll start though by not grinding it as fine and see how that works. Great recipe overall and so simple!

Barley Bake

This is a really hearty dish! I did make a couple of changes but I don't think they are significant enough to be called major. I used 1/2 butter and 1/2 olive oil, and since I didn't have any vegetable broth I used chicken. Added a pinch of oregano and lastly I toasted the pine nuts for a few minutes to bring out their flavor. Served it with a roasted chicken and it was awesome! 6/14/10 - Update: Made this again and added a small bit of chopped celery and carrots. It added a subtle flavor change and the carrots made it look pretty!

Tater Tot Bake

This is great comfort food! I usually use 1 1/2 1bs. of ground beef and double the sauce (sometimes I leave a little bit of it out though). I play around with the type of soup too...my favorite is Cream of Chicken w/Mushroom. Slap the cheese on top, bake and dig in!

Hash Brown Quiche

This was really good! I didn't have ham so I used crumbled bacon and scaled it down to about 2/3 cup. I omitted the salt in the eggs because it already had seasoned salt plus the salt in the bacon. It came out really well. I think the only thing I might do in the future is to scale the butter down to about 1/4 cup because it was a little greasy (I used a paper towel to sop some up) and I would also add at least one more egg, maybe 2. This is a recipe you can really play around with!

After-Thanksgiving Turkey Soup

This was yummy! The only thing I changed was to add another stalk of celery because I like celery. Also, I was afraid to add the full 2t of salt because I thought it might be too much, but since I used low sodium bouillon it really did need it so I added a bit more at the end. Very good! Made it at camp and everyone enjoyed it. Definitely not a low fat dish but nice to splurge on once in a while.
