Kentucky Butter Cake

Reviewed: Feb. 7, 2011
This is EXCELLENT! Buttery, moist, sweet, rich and fattening, but excellent! Made exactly as written. I had no trouble getting it out of the pan so not sure why others did. Definitely something I wouldn't make on a regular basis, but delicious just the same!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Feb. 7, 2011
Hmmm, I'm not sure how I feel about this recipe. It doesn't live up to it's name. It wasn't sticky and didn't taste like any rotisserie chicken I've ever eaten, but it was still good. But just good. For our taste, there is too much pepper of all types, and definitely too much salt. But it did come out moist so that was a plus.

Chinese Chicken Fried Rice II

Reviewed: Feb. 5, 2011
This tasted okay, but I felt it had too much soy sauce (I used a low sodium version). I would also use less pepper and would replace some of the white/yellow onions with green ones. It would also be nice to incorporate some veggies into it. Overall it was good, just not anything like fried rice that I traditionally eat in restaurants.

Baked Pasta

Reviewed: Jan. 31, 2011
This is great! I used mostaccioli pasta. The only change I made was to use marinara sauce since I didn't have tomato sauce. I make this type of dish quite often but have never added brown gravy or half-and-half. The combination of ingredients sounds strange but they meld together so well. I think I'll be making it this way from now on!

Rice Balls a la Tim

Reviewed: Jan. 26, 2011
These are really good! Per other reviews, I added additional spices (oregano, basil, garlic powder) after I browned and drained the meat. To break up the meat into even, small pieces, I always use a wire potato masher as it browns. After the 25 minutes of baking they weren't quite brown enough for my taste so I put the broiler on and watched them closely. Pulled them out of the oven and let them set up for about 15 minutes before putting the sauce over them. A nice change from an all-meat meatball!

Apple Pie Muffins

Reviewed: Jan. 23, 2011
These are incredibly moist! The only thing I did differently was add literally a shake of cinnamon to the flour mixture. Otherwise followed the recipe to the letter. They produced a nice muffin top, something I'm not good at achieving for some reason when I've made other muffins. Overall really great flavor and texture. Will definitely make again!

Chicken Rice Balls

Reviewed: Jan. 23, 2011
These were very good. I use finely diced leftover chicken breast meat. I didn't have cornflakes so used panko crumbs, and also didn't have the soup but had leftover turkey gravy so used that instead. They were nice and moist even without the gravy and had great flavor. Will definitely make again!

Delicious Ham and Potato Soup

Reviewed: Jan. 1, 2011
This is yummy! A rich, hearty dish. I doubled the recipe but did not double the pepper. I used sodium free boullion so I added the salt the recipe called for. I decided to do what some others had done and used some chicken broth, so for the 6 1/2 cups of water I needed I used 2 cups of broth and 4 1/2 cups water. I think next time I may use all chicken broth and see how it comes out. Excellent recipe and a great way to use up Christmas ham!

Day-After-Thanksgiving Turkey Carcass Soup

Reviewed: Nov. 28, 2010
This soup IS very good. I left out the peas because I didn't have any, but otherwise made exactly has written. The stuffing adds a nice touch and is a great way to use up leftovers. Try it, you'll like it!

Yam Casserole

Reviewed: Nov. 25, 2010
While I don't care for yams, my family does, so I decided to make this dish. They all loved it! I did try it myself, and although I still didn't care for the taste of the yams, the topping was yummy!

Old Fashioned Stuffing

Reviewed: Nov. 25, 2010
This was very tasty. The only thing I did differently, and it's because I like chunky, not creamy stuffing, is instead of toasting and crushing the bread with a rolling pin, I cut the bread into cubes and toasted them in the oven, then put them on the counter to dry out some more. Everything else I followed as directed and it came out great!

Cream Corn Like No Other

Reviewed: Nov. 25, 2010
OH MY GOODNESS! This is awesome! I used 1/2 & 1/2 in place of both the cream and whole milk because that's all I had, and left out the parmesan cheese because I didn't have any, but I can't see how this can taste any better. So delicious!

Cranberry Sauce

Reviewed: Nov. 24, 2010
This is good, but I agree with other reviewers that there is too much orange juice in it, unless you are trying to mask the flavor of the cranberries. I even used 1/2c OJ and 1/2c water and the flavor was still too strong. I added some cranberry juice to take away some of the OJ flavor. It made it better, but I think next time I will only use 1/4c at the most.

Rich and Creamy Tomato Basil Soup

Reviewed: Nov. 10, 2010
Soooo good! The only change I made was to use half and half instead of cream to save on calories. It would have been richer with the cream, but honestly this soup tasted great even before I added the half and half so you could vary the recipe several ways.

Beef Tips

Reviewed: Nov. 10, 2010
This was absolutely delicious. I used low sodium soy sauce and left out the 1t salt, and it wasn't salty until I added the gravy packet. I did what others suggested and didn't add the 1c water with the packet because there was alot of juice from the meat, but I'm sure omitting it is what made it taste so salty. Next time I will add the water and simply thicken it up with some cornstarch. I have to give this 5 stars because if I would have followed the recipe I think it would have come out just fine. Thanks for a great recipe denisef!

Amazing Pecan Coffee Cake

Reviewed: Sep. 25, 2010
This is really good. Very light but moist. Only change I made, which I won't do again, was to use 1 1/2x's the topping. Reading the ingredient amounts it didn't seem like it would be enough, but adding more made it too sweet for us. Because of this change I would rate it a 4, but since I know next time I make it with the exact amount it will be a 5, so that is my true rating.

Apple Cake I

Reviewed: Sep. 12, 2010
This is yummy! Very moist and full of flavor. It almost had too many apples in it for my taste though, so next time I may only put in 3 cups. I added 1/2 cup of hazelnuts and used 1/2 cup canola oil and 1/2 cup applesauce. I made them into muffins so will be having them for breakfast!

Easy Grilled Chicken Teriyaki

Reviewed: Sep. 10, 2010
This was good and very simple to make. I only marinated for about 12 hours but it was still very flavorful. I felt it had a bit too strong of a garlic flavor, but that could have just been those particular cloves. When I make it again if it's still strong I will cut back a tad. I think next time I might cut the chicken up and put it on skewers with pineapple and veggies.

Steak House Au Gratin Potatoes

Reviewed: Sep. 7, 2010
Yum yum yum! These were delicious! The only adjustment I made based on personal taste was to cut down to 2 cloves of garlic, but I think next time I will up it to 3 and see how we like it. I typically don't use alot of salt but I think I could have used a little more here so I added some afterwards. That's easy to change for next time. And there will be a next time!

Marinated Ranch Broiled Chicken

Reviewed: Sep. 7, 2010
This was really flavorful! I only had chicken tenders so I used those, and I threw them on the BBQ instead of using the broiler. So simple to make...just put them in the marinade in the morning and grill them when you get home. If you know what's in the marinade then yes, it does taste like Ranch, but at the same time, the vinegar changes the flavor so if you didn't know what was in it you might not figure it out. But who cares, it was good! Will definitely make again!
