Buckeye Balls II

These came out pretty good, but even after only adding 3 cups sugar and adding in more peanut butter, the dough was a little crumbly. I was able to roll them up okay though. I put them in the freezer for about an hour, then dipped them in the chocolate, completely covering them, like truffles, instead of having the top show. The flavor is pretty good, but I almost think it needs a little more sugar, but if I would have added more I don't think they would have rolled up nicely. I might make again and play around with the recipe some more.

Barley Turkey Soup

This is good. I made it exactly as stated, but it took about 1 1/2 hours for the barley to be completely cooked. I know it should be a little al dente, but even after an hour it was still pretty hard. The overall flavor is good though so I might make it again.

Brickle Cookies

These were good. They are really easy to make and have a nice light texture to them, but they are very sweet...almost too sweet for my personal taste. Also, I have never seen a 9oz. box of cake mix, so I measured out 9oz. on a food scale and will just use the rest for cupcakes.

Turkey Pot Pie I

My first attempt at a pot pie was a success! Deelicious! The only thing I did differently was to add about 1/2 cup of homemade turkey gravy since I had it in the fridge and wanted to use it up. The next time I make this I will add more turkey since my potato/turkey ratio was off a bit. Really great flavor, loved it!

Cheddar Onion Drop Biscuits

These were very good but a little bland. I didn't have dried onion so I took other reviewers advice and used green onion. They came out pretty, but I wonder if that could have been part of the reason they weren't full in flavor. Will definitely make again but will try with the dried onion and see what happens. I also might add a little Old Bay Seasoning next time for added flavor. 11/26/11 update: I just made these a 2nd time because I had green onion and sharp cheddar that I wanted to use up. This time around I added more cheddar, a little more onion, and a dash of season salt. This batch was much more flavorful! Definitely 5 stars with those changes.

Easy Pizza Sauce III

This was my first attempt at making pizza sauce and it was really good! I didn't have dried so just used 1t fresh crushed garlic, and I used tomato paste that had italian seasonings in it but still added the called-for spices. The finished product was a little thick so I added about 1t olive oil to thin it out a bit. Minor changes, but I'm sure it would have tasted great had I made it exact. I used this sauce for a pizza dip that I made, but one day will make a pizza and use it for that as well.

Hot Pizza Dip

Yum yum yum yum yum! I followed the recipe exactly, with the exception of using the mini pepperonis instead of buying the big ones and chopping them up. As other reviewers recommended, I cooked the pepperoni in paper towels in the microwave, on low, for a total of about 3 minutes to get most of the grease out of them. I sliced baguettes thin, then cut them in half diagonally and then toasted them in the oven for 6 minutes. They had just the right texture...a little soft on the inside but hard enough on the outside to hold up to dipping/scooping. This recipe is so simple! I will definitely be making it again. 1/1/12 - Went camping for New Year's and made this as a dish to share and it was a hit! Gotta love simple, delicious dishes!

Chocolate Chip Banana Bread II

This is so moist and yummy. The only thing I changed was to add extra walnuts because I love them in banana bread. The addition of the chocolate chips was different but I bet it would be just as good without them, and not as sweet either. Definitely will make again! UPDATE: We're on day 4 of eating this and it just keeps getting better and better. I keep it in the fridge to keep it fresh and from drying out. Try it, you'll LOVE it! The best banana bread I've ever made.

Chris' Bay Area Burger

Seriously good! The only thing I did as per other reviews is cut down on the salt, which I am glad that I did. I used less than a teaspoon. I wanted to make it as written the first time around, but next time I will use fresh basil and see how it comes out.

Frosty Strawberry Squares

This was really good! One thing I did based on a review was to make 1 1/2 times the amount of the crust. While the crust is sooo yummy, it dominated the dish, so the next time I make it I think I'll make as written and see how it tastes. Also, I chopped the strawberries fine but they were still icy so next time I will mash them up. I have to give it 5 stars though because it's easy to make and tastes great!

Acini di Pepe Salad

This was good, but for my taste there was too much whipped topping. I only added about 6oz. and that was too much. I also left out the marshmallows since I don't care for them and I substituted grapes for the cherries. If I do make this again, I think I'll only use 4 oz. of the whipped topping and see if I like it better. Or I might use real whipped cream.

Ultra Creamy Mashed Potatoes

Just like it says, they are ultra creamy! Great recipe that I will definitely make again. I did not add any of the "twist" ingredients, just made the recipe as stated. The only thing I did to the potatoes (something my mom taught me when I was young) is once you drain the potatoes, put them back in the pot and back on the burner that you've turned off. Let it sit for about 30 seconds and then give the pot a shake. Do this for a couple of minutes...it will take out the excess moisture in the potatoes so they do not get gummy when you mash them. Works every time!

Donut Muffins

These were good, but I agree with some other reviewers that it calls for too much nutmeg (and I used fresh grated, which is more mild). I think using less would make it taste more like a donut. I would also wait about 5 minutes before rolling them in the sugar so that the heat of the donut didn't "melt" the sugar into it. But overall these were pretty good and very simple to make so I will make them again with the minor adjustments.

Garlic Red Potatoes

These are great! To ensure even coating I put all but the parmesan cheese in a bag and shook it up. Dumped it into the pan and sprinkled on the cheese. It took about an hour to cook though. About 45 minutes covered and another 15 minutes uncovered. They came out perfectly cooked and so delicious!

Cherry Tomato Corn Salad

I had to take a taste of this right after I made it and it is so good! I bet it will be even better after the flavors meld for a few hours. So simple to make, and so pretty too. I used a seedless cucumber so I wouldn't have to seed it, but did everything else exactly as written. Love it!

Oatmeal Peanut Butter Cookies III

These are sooooooo good! Very easy to make, and the only thing I changed was I added some chopped walnuts to the batter. One suggestion I would make, because they are on the sweet side, is if you make them with the filling make them small, if you make them without the filling make them big. I am also going to try and use these to make ice cream sandwiches!

These were simple, quick & yummy! Only thing I changed was to use Season Salt instead of regular salt. Next time I might try it with a little onion and maybe a little ham and cheese to make a meal out of it.

Peanut Butter and Banana Dog Biscuits

My dog loves these, and I have to admit they don't taste bad either! Very easy to make and with the exception of the wheat germ I always have everything on hand. Since I don't stock wheat germ I followed others advice and use oatmeal they it come out fine. I cut them with a very small cookie cutter and was able to get about 80 treats. Nothing is mentioned about what the shelf life is so I keep them in the refrigerator. 2/12/12: Made these again and used wheat germ. I used a medium sized heart cookie cutter and got 24 treats. My dog loves them!
