Sicilian Sausage Soup

This soup was really good. I'm not a huge sausage fan, but this wasn't overpowering at all. I made the recipe as written, but like others I thought it was too tomatoey so I added another 1 1/2 cups of broth and that fixed it. I also used 2/3 cup pasta instead of 1/2 cup just because I like more. Paired it with some crusty french bread.

Passion Bars

We liked this alot, but we both would have preferred a few less chocolate chips. Other than that, and the pb mixture being hard to spread (should have microwaved it for a few seconds) it was easy to make and had nice flavor and texture.

Irish Soda Bread

I've never had this kind of bread before so I don't know how authentic it is, but I'm a believer that as long as it tastes good it doesn't matter. I had to modify two things...I didn't have caraway seeds, and my hubby doesn't like raisins, so I left them both out. I don't know if I would buy caraway just for this recipe, but next time I make it I'll add the raisins. I can tell it would taste wonderful with them in it.

Eezy Bikkies

As the author wrote, these can get hard quickly. They are difficult to eat on their own but would be nice dunked in coffee. They have good flavor, but are really, really sweet. Too sweet for our taste so I probably won't make them again.

Meh, not much to write home about on this one. The sauce was just okay and there wasn't much of it. If I ever made it again I would add some chicken broth to it, but I'll probably just look for a better recipe.

Beef, Burgundy Style

This is really good, but it took about 4 hours in my cast iron pan for the meat to become fork tender. I made exactly as written, but I think I will make two changes next time. First, cut the meat into smaller chunks so it will cook quicker, and also reduce the amount of rosemary to 1 sprig. I'm not a lover of it and it was the dominant flavor in the sauce.

Oven Scrambled Eggs

I was making this for 2 people so I scaled it back accordingly and they came out great! They were a little bland though, so I think next time I'll add some pepper and maybe a little more salt. Otherwise, they came out perfect and fluffy!

Heather's Healthy Oatmeal Surprises

These are delicious! Several reviews said they omitted the white sugar so I was worried they might be too sweet, so I cut it back to about 1/4 cup and I think that was a perfect amount. Not too sweet, not too boring. I like raisins but my husband doesn't so it was nice to find a recipe that didn't have them in there. I also used parchment paper on my cookie sheet so they wouldn't stick.

Lemon Bundt Cake

This is very good and moist! I had a really hard time finding lemon cake mix, and when I finally did it was a 15 oz. box, but I left the rest of the ingredients the same and it came out fine. This had great lemon flavor but I like it a little bit stronger so next time I'm going to add some grated peel.

Stuffed Shells IV

This was pretty good, but I think the meat mixture needed some extra seasoning, possibly with oregano, basil and more garlic. It seemed a little bland to me. I made 2 changes but I don't think it affected the flavor as far as seasonings go. First, I don't like cottage cheese in anything so I used ricotta. Second, I used fresh spinach as that was all I had. This recipe makes alot! I should have looked at the number of servings because there were only 2 of us eating it so we tired of it after the 2nd meal. Next time I will cut the recipe in half, and add the seasonings I mentioned above.

Oven Roasted Red Potatoes

I'm giving this 3 1/2 stars. It was good, but I thought it was a little bland. I halved the recipe but that shouldn't have mattered. I think it depends on the size of the potatoes. I used bigger ones so I actually quartered mine and they just didn't seem to have enough coating to make them flavorful. I am going to try the recipe again but use the really small ones and see if that makes a difference.

Sauteed Mushrooms

I don't like mushrooms but made these to go on top of my hubbys steak and he loved them. I had to cut the recipe in half and instead of measuring out the ranch mix I just sprinkled some over the butter close to what I thought half would be. Came out great.

Grilled Shrimp Scampi

I don't like shrimp but I made this for my hubby and he said it was good! I only made 6 jumbo shrimp so I had to scale the ingredients back, and per his request I am going to add a bit more garic next time.

Best Chocolate Chip Cookies

These are delicious! Over the years I've been known as "the cookie lady" because of the dozens and dozens of chocolate chip cookies I would make, but even though they were tasty they were flat. These did not run and came out really nice, better than any chocolate cookie I've ever made. I don't know what exactly makes them different but they are. Really great recipe, thanks!

Toasted Garlic Bread

This was pretty good, but I prefer the Garlic Bread Fantastique recipe from this site. I think it has to do with the type of bread and cheese that is used on that one. But hubby prefers this one so we'll probably alternate between the two.

Caramelized Chicken Wings

Finger licking good! I only used about 1 1/2 T of peanut butter and the flavor was still dominant so I added a little more soy sauce and that helped. It also wouldn't thicken up for me very much so I took the juices out of the pan, added a little cornstarch and cook it til it thickened, then threw it back in the pan with the wings and cranked up the heat until it reduced a bit. When I took them out of the pan the sauce stuck pretty well. The meat is so tender and has great flavor!

Garlic Bread Fantastique

This is great! The only thing I did different because it's all I had was to use a 4 cheese blend instead of straight parmesan. It was yummy, and I'm sure it would have been just as good with parm. Really easy to make and a nice change from regular garlic bread that's just made with butter and garlic.

Banana Upside-Down Cake

This is deeelicious! I couldn't find banana cake mix so I used a yellow mix and added a mashed banana to it. I love butter/sugar/pecan topping so I decided to double it, but it made it a little too sweet, so next time I'll only do 1 1/2 x's the butter/sugar but double the nuts. Lastly, I wanted one big cake so I just used a 9x13 pan and baked it for 40 minutes. Turned out onto a platter as soon as it came out and there was no sticking and it looked very pretty. I ate a piece warm and the bananas just melt in your mouth. So good!

Shredded Tri-Tip for Tacos in the Slow Cooker

I could tell this would be spicy so I halved each of the peppers, but even with that modification, 2 bites in and I felt like I was gonna choke. It was almost like someone took a Q-tip and swabbed the back of my throat with cayenne. I admit I'm not a big fan of spicy dishes (I like bold flavor, not super spice), but I honestly thought with my modifications it would turn out okay. I don't know how anyone could eat this dish with full amount of peppers. The one star is for the fact that it is simple to make.

Banana Bars

I can't rate the cake itself because I'm giving it to my parents, but I can tell you that it was easy to make, it smells wonderful and it looks beautiful in the pan! I used a 7x11 pan so it is a little thicker and I also added an extra banana and the last egg I had in the refrigerator to use it up. I did taste the frosting and it's sweet, but isn't frosting supposed to be? But since I'm not a frosting lover I only used about 1/2 of it. It has wonderful banana flavor though. I am going to let a batch of bananas turn this weekend so that I can make it again, this time for us, and will come back to rate the cake!
