This was quite good, but here were my differences: I didn't have arborio rice, so I used long grain. First mistake: if you're using long grain rice, don't add 1/2 C at a time. Put in the white wine, let the rice absorb it, and then pour in all the broth and let the rice cook to package directions. After 30 minutes of adding 1/2 C broth at a time, the long grain rice was still undercooked. Also, I didn't thinly slice the mushrooms. I just chopped them up into small pieces and threw them in the skillet to get sauteed. Worked beautifully. Parmesan cheese? I didn't taste it at all, so why add the calories? Next time, no Parmesan. Really liked the taste and texture of this recipe. Thanks for sharing!!
