Pumpkin Cream Cheese Muffins

I made these on a whim and OH MY GOSH! I have people asking me for both the recipe and more muffins every time. My fiance LOVES these. One note: Make sure to put a legitimate crater inside the center of the muffin for the cream cheese--didn't do it one time and the muffins were significantly altered.

Exquisite Pizza Sauce

This sauce is amazing! When I doubled the recipe for a whole pizza, (which is essential), the twelve fluid ounces of water was too much. We had water dripping from the dough onto the oven floor. Awesome. Next time, I think I will opt for about 10 ounces. But, the pizza still tasted amazing! I couldn't find anchovy paste (which I was very disappointed about), but it was still very tasty. I think I will follow the tip about bottling up the dry ingredients.

Quinoa and Black Bean Chili

I wasn't able to drain the quinoa, (no metal mesh strainer), but we both liked it quite a bit. Full chili taste without the beef.

Buttercream Icing

Wonderful vanilla buttercream flavor! Made this on a marble cake, and my in-laws loved it! I used all butter, as a previous review had suggested, and I was not disappointed. Only qualm: this didn't make a whole lot of frosting. I had to add four more tablespoons of butter and about 2/3 C of confectioner's sugar to get just enough, and even with the addition, it barely covered the whole cake with its three layers. Next time, I will add a third more to this recipe, or even another half, to get all the icing I need.

Blueberry Cream Muffins

Incredibly good! 2 cups blueberries were not enough, though. I'd used all the blueberries in the batter, and there was batter leftover, so I threw in some chocolate chunks, and baked them as mini muffins. Both were big hits in Fort Wayne.

Seasoned Turkey Burgers

These are phenomenal! My husband requests these all the time. We don't have an outside grill, so we use his panini grill, and it works great! (And cuts down the cook time to about five minutes.) Will make again and again!

Slow Cooker Chicken Taco Soup

Phenomenal! This was tasteful and delicious. This makes a ton of soup! I used three chicken breasts, which was plenty. I also used an Old El Paso burrito seasoning mix because I didn't have any taco, and that was great. I added chicken broth instead of the beer, and I think that if I had left it out, this would have been more like a chili. The diced tomatoes, tomato sauce, and the natural juices from the chicken would have been enough. I'll leave out the broth next time. Also, to cut down on the sodium content, I will rinse the beans before adding. Used HOT chili beans, and that added some oomph. Great recipe!!

Gourmet Mushroom Risotto

This was quite good, but here were my differences: I didn't have arborio rice, so I used long grain. First mistake: if you're using long grain rice, don't add 1/2 C at a time. Put in the white wine, let the rice absorb it, and then pour in all the broth and let the rice cook to package directions. After 30 minutes of adding 1/2 C broth at a time, the long grain rice was still undercooked. Also, I didn't thinly slice the mushrooms. I just chopped them up into small pieces and threw them in the skillet to get sauteed. Worked beautifully. Parmesan cheese? I didn't taste it at all, so why add the calories? Next time, no Parmesan. Really liked the taste and texture of this recipe. Thanks for sharing!!
