Chicken Cordon Bleu II

Yum, yum! Changed up a few things that made it easier to make and (in my opinion) more delicious. . . Butterflied the chicken breasts, so that I didn't have to make a mess pounding them and waste some plastic wrap. I stuffed the chicken with sliced spiral ham--healthier and heartier than the deli stuff and did NOT include the cheese. I followed the directions for browning and cooking on the stovetop, but instead of adding heavy cream, I added milk and stirred in about two cups of shredded Swiss cheese, and made a cheese sauce! I always hate how the cheese leaks out of the stuffed chicken, so I just thought: What the heck? I'm making a sauce instead! It was so delicious altogether. I'm sticking to my way from now on. :) Great recipe!!

Raspberry Chocolate Chip Muffins

Pretty good, but I'm not a huge fan of chocolate and fruit together. From no fault of the recipe, my raspberries were tart. :P Nevertheless, I think a big fan of chocolate and raspberries would, I am sure, love this recipe. :)

Slow Cooker Turkey Breast

Smothered Meatballs

Delicious. Halved the recipe and it was perfect. We really enjoyed this--thanks for the recipe! Oh, and I didn't add any green pepper, and I don't think we missed it.

Cream Cheese, Garlic, and Chive Stuffed Chicken

Next time, I want to take another reviewer's advice and cook the bacon a bit before wrapping it over the chicken. It wasn't done enough for our tastes. Also, I just eye-balled the cream cheese mixture to taste, added chives and steamed asparagus inside. Melted about 2 T butter and added minced garlic to that, and poured it over the chicken breasts. Yum!

Stuffed Shells III

Makes a ton, but we enjoyed these a lot! Froze a pan. Used leftover marinara sauce with beef and peas. Somebody suggested using a bag to pipe the cheese filling into the shells. Bad idea. The cheese was so thick it wouldn't come out of the bag and I felt like my hand was going to break. Gave up and spooned it in. Surprisingly easier!

Chef John's Baked Eggs

Delicious. My hubs was a little unsure about it when he first saw it, but he ate every bite. Shortcut: Used arrabiata sauce instead of marinara and red pepper flakes. Very spicy! Didn't use the heavy whipping cream and don't think we missed it. Baked five eggs in a ceramic pie plate at 400 for 15 minutes. Yum!

Butter Cream Frosting II

This didn't have an all-out buttery flavor, which I missed. It was sweet and tasted lovely on snickerdoodle cupcakes. I may add some cinnamon to it to match the cupcakes better. :)

Snickerdoodle Cake I

This tastes just like a snickerdoodle cookie! I, too, added 1/2 t of cinnamon and vanilla extract to the batter. Glad I did, since I made buttercream frosting to go with this, not the sugar-cinnamon topping. Also, made cupcakes: 350 degrees for 19 minutes and 15 minutes for mini cupcakes. Thanks for the recipe! Update: I used Buttercream Frosting II from this site and followed it to the letter, but added 1 t of cinnamon. Wow! Made this cupcake stand out even more.

Chicken and Broccoli Braid

I made a number of changes: 1) Didn't use a pepper, garlic, almonds, dill weed, or mayo. 2) I added ranch dressing instead of mayo. 3) Used colby-cheddar cheese instead of cheddar. 4) Steamed the broccoli. It was like a casserole in a crescent roll wrap. Yum! My family loved it. We ate every last bite!

Chicken Marsala

Mm! Made this for my parents when they visited us in Indy all the way from Roch, NY. They really enjoyed it and so did my husband and I. The sherry was a nice touch. Added two 8 oz. cartons of fresh mushrooms. Yum!

Cajun Style Baked Sweet Potato

Someone had reviewed that her sweet-potato-hating family couldn't tell these were sweet potatoes. . . Well, mine could. Doused with ketchup, they were eaten. I think if I made these are regular Russet potatoes, they'd have been scarfed down with relish. I think these could be reminiscent of Five Guy's cajun fries, so these could make a very good side for burgers some evening. Thanks!

Salsa Chicken Rice Casserole

My husband said, "This is killer." I don't get that reaction with every casserole. :) I made a few changes: 1) I omitted the cream of chicken soup (kinda grosses me out) and substituted a can of creamed corn for it, (slightly drained). 2) I added a diced red pepper, which added flavor, color and nutrition. 3) I used one large bone-in, skin-on chicken breast, broiled in water for 40 minutes (any less, and it won't be cooked through) and shredded that, then added it to some leftover taco-seasoned shredded pork loin and black beans mixture. 4) Ate it with Fritos sprinkled on top. Made altogether, this was spicy, flavorful, and a "killer" keeper. :) Thanks for the recipe!

One Bowl Chocolate Cake III

I really like that this cake looked almost black as it came out of the oven, but was really springy and light. I made cupcakes: baked at 350 for 23 minutes, and mini cupcakes at 350 for 17 minutes. Perfect results. I paired this with the Rich Chocolate Frosting and together the cake tasted reminiscent of Wegman's chocolate cake, (which is the best on the planet). Next time, I want to try using buttermilk. Great recipe---thanks!

Rich Chocolate Frosting

I used 7 C of confectioner's sugar. This made a good texture to the frosting, without making it sickly sweet. When I paired this frosting with the One Bowl Chocolate Cake, together the cake reminded me of a Wegman's chocolate cake. Definitely not it exactly, but reminiscent.

Broccoli Rice Casserole

This was quite good. I think what would have made it better was to add crushed butter crackers on the top and baked it that way. Also, to make it vegetarian, I think I will add a can of cream of celery soup instead of chicken. I didn't add celery, so that might be a good way to get it in there, regardless. Nice recipe! Hubby went back for seconds. :)

Grandma's Chicken Chardon

When I made this last night, I was struck by two things: 1) Such an easy dish to make! and, 2) It wasn't so very flavorful. Given all the wonderful reviews, I couldn't understand it. Then, I went back on here to review the recipe and realized I'd forgotten the parmesan cheese and the lemon. Whoops! Next time, I'll be sure to add those. The mushrooms were delicious either way!
