Zucchini Brownies

I can't imagine myself making these again. What a weird taste. Neither my husband nor I really liked them. . . I don't really understand the rave reviews--these are definitely not traditional brownies.

Chocolate Zucchini Bread I

Delicious. I would highly recommend, however, topping the loaves with chocolate chips. They'll sink to the bottom, and man alive--they do NOT want to come off the bottom of the pan! So, top away, and the loaves will come out fine. Added about 3/4 C of sour cream. Mm mm good. :)

Best Tuna Casserole

This was delicious. The recipe makes a rather enormous casserole, so make sure there are plenty to partake! I didn't have any potato chips, so I covered the top with Original GoldFish Crackers. How cute is that for a tuna casserole? :)

Grandma VanDoren's White Bread

A bit dry, and the directions for this bread would be very difficult for a novice bread-baker. Whenever the directions indicate to let the sponge or bread rise, I heated up my oven to 350 and then turned it off and opened the oven door, slipping the bowl of sponge or bread loaves onto the rack and letting rise for about 30 mins. Perfect results.

Chicken Breasts in Caper Cream Sauce

Made this successfully, (meaning made deliciously), with mushrooms (16 oz) and two zucchinis instead of chicken. Followed everything to a T, but did a bit less dill; I find it very strong. Delicious!

Used 3 very thick slices of bacon; peppered to taste, (despite what one reviewer advised in adding salt, I felt the bacon provided plenty of that!); since I didn't have any fresh basil or parsley, used dried of both, to taste; added a splash of white wine to the skillet after the onions and garlic had cooked. This was a delicious pasta dish and a great alternative to my usual marinara sauce. Thanks for the recipe!

Classic Macaroni Salad

Oh dear me. This was phenomenal and I found it quite difficult to stop eating. I halved the recipe, and since I didn't have any pepper, omitted it. I also added two chopped hard-boiled eggs, because that's the way my mom always made macaroni salad, and---what can I say?---I love it that way. Very, very good!

Lemon Bread

Per another's review, I added 2/3 C lemon juice, which was a good call. I love super lemony breads. I didn't have any walnuts, so I used pecans. I'm still on the fence about adding nuts to a bread that just seems to beg me to use poppyseeds instead. :) Left off the glaze because I just didn't feel like making it. Either way, this is delicious and my husband has been really enjoying it for his breakfasts this week.

Golden Egg Loaves (or Braids)

I was seriously salivating when I smelled this baking in the oven. This is a fantastic, versatile bread! I didn't have any wheat gluten, so I simply had to do without. I also ran out of honey after about 4 T, so I left as-is, and the bread was divine. If you're like me and don't have a stand mixer with a dough hook, don't fret. I mixed all this up very successfully with a hand mixer and then kneaded on a lightly floured surface. What the directions don't tell you is to remove the bread from the pans immediately after baking. I learned from another bread recipe that allowing the bread to sit in the pans can likely form mold on the bottom of the loaf down the road. Allow the bread to cool completely on a wire rack, and then bag it up. I kept one loaf out and froze the other. I can't wait to have a grilled cheese with this bread! Great recipe!!
