About this Cook
I never thought I'd enjoy cooking, but it's become a creative outlet for me after working a long, full day. Making dinner is what I look forward to every evening. My husband and I really enjoy trying new foods and restaurants. I am beginning to feel passionately about organic foods; basically, just organic meat and eggs. I love animals! (We have a rescue dog.) And I think that I have a responsibility to support farmers and companies that raise animals humanely and healthily.
My favorite things to cook
My favorite foods include: Scallops, any type of fish, mushrooms (the cadillac of vegetables), and pretty much anything Italian. Basically, if I can cook or bake it and it comes out right, I like it!
My favorite family cooking traditions
My Mom always makes Julia Child's boeuf bourguignon at Christmas time and my Grandma's delicious rolled sugar cookies. Now setting up my own household, I make a platter of cookies: rolled and cracked sugar, chocolate holiday chip, white chocolate chip macadamia nut cranberry, and more!
My cooking triumphs
As I read up on cooking, baking, and prepping techniques, I've become a much more competent and confident cook. Triumphs include: meaty and meatless marinara sauces, chocolate chip cookies, pork enchiladas, and chicken pot pie.
My cooking tragedies
White clam sauce with fettuccine: (a runny, dripping, flavor-less mess), and my first attempt at mashed potatoes: (burnt potatoes because I cut them in huge chunks). Here's to better results! :)

Chicken Breasts in Caper Cream Sauce
Made this successfully, (meaning made deliciously), with mushrooms (16 oz) and two zucchinis instead of chicken. Followed everything to a T, but did a bit less dill; I find it very strong. Delicious!

Used 3 very thick slices of bacon; peppered to taste, (despite what one reviewer advised in adding salt, I felt the bacon provided plenty of that!); since I didn't have any fresh basil or parsley, used dried of both, to taste; added a splash of white wine to the skillet after the onions and garlic had cooked. This was a delicious pasta dish and a great alternative to my usual marinara sauce. Thanks for the recipe!
