Chickpeas in Tomato Sauce With Feta and Wine

This is one of my favorite side dish recipes. I use a small can (8oz) of tomato sauce instead of the diced tomatoes and I serve it over rice or chicken. Really delicious- especially the next day!

Slow Cooker Tender and Yummy Round Steak

The flavor of this dish was okay, but definitely add the vegs in the last 2-3 hours of cooking. I followed the recipe (but browned the meat first) and the veggies turned into a mushy mess at the bottom of the slow cooker. I think my slow cooker was also a little too big- the liquid didn't cover the meat and I think that made it a little tough.

Bourbon Chicken

Italian Chicken Sausage Risotto

This was fairly easy to make and really delicious! I used chicken parmesan sausage (what I could find at the meat counter). I had to add salt at the end to bring out the flavor.

Slow Cooker Beef Stroganoff I

This was so easy and delicious! I followed the recipe, but substituted beef broth for the water and reduced fat sour cream for the cream cheese. I added a little garlic powder, salt, and pepper (it's not listed in the recipe, but I think it's a given). Next time I'll make sure to add some mushrooms at the end. I cooked it on low for about 6 hrs and the meat was so tender and juicy!

Spinach-Cheese Swirls

These taste good and they are very easy to modify. I agree with other posters about freezing them first (then coat a knife with cooking spray before cutting them into pieces so they don't stick). I also try to chop the spinach up more in a food processor so it's not stringy. However, for the amount of work involved in making them I find myself getting annoyed. They're good, but they're not -great-.

Oven Fried Chicken III

This is my favorite recipe for oven fried chicken. The mayo mix keeps the chicken extra-moist and the chicken always comes out juicy and crispy. I spray mine with Pam before putting it in the oven to make sure the top has a nice crunch to it.

Roasted Vegetables

I love this recipe- and I just found out that you can buy a package of pre-chopped veggies in a 'soup starter' pack (which also includes fresh rosemary and thyme). It was $5 at Safeway and included onions, carrots, zucchini, yellow squash, garlic, rosemary and thyme.

Cheesy Hash Brown Bake

Quick and delicious! I made this for a work breakfast and everyone loved it. I put it in the fridge the night before and just popped it in the oven in the morning and it turned out great.

Broiled Tilapia Parmesan

I make this about every other week and I love how quick and easy it is. I usually add panko breadcrumbs to the mix (instead of regular breadcrumbs) before putting it on top of the fish, and it makes it extra crunchy.

Baked Apricot Chicken

I'm giving this one 4 stars b/c my boyfriend really liked it, but I just thought it was okay.. I added chili paste to make it a little spicy, but that was the only thing I changed. I wasn't a huge fan of the color either.

Delicious Chicken Casserole

The only changes I made were to add chopped celery and carrot and about 1/4 bag of mixed veggies. It was filling, but kind of bland.. maybe because I used low sodium soups and light sour cream? It needed a little more flavor- maybe adding some chopped rosemary (or another herb) before baking.

I love this recipe. I made it with 3/4 c. applesauce and 1/4 c. oil as another person suggested. I also used about 3/4c. sugar instead of the full cup and it still came out moist and delicious!

Savory Pumpkin Soup

Very tasty. This soup is more like a bisque and it is much better the second day (leave it in the fridge overnight for the flavors to blend). Top it with some mozzerella cheese and it's great! I'm making this for a Thanksgiving appetizer and I'll serve it in tiny pumpkins.
