Asian Lettuce Wraps

Delicious! I made a few changes/additions and the result was perfection. I used ground chicken and fresh ginger. Do exclude the water chestnuts, they are integral to the dish! I also made crispy vermicelli which took this dish from a 4.5 stars to a 5/5. It's a quick add-on and really makes the recipes restaurant quality! Also, at the suggestion of another reviewer, I turned the leftovers into a salad, with hoisin sauce as the dressing -- amazing and not nearly as messy!!

Extra spices are definitely required. I didn't care for the consistency though. Perhaps making them with bread crumbs instead of flour would help.

Mini Meatloaves

Just perfect, with a few small changes. Add chopped onions to the mix, replace the oatmeal with bread crumbs, and add some onion powder, garlic powder and thyme. I also threw in some jerk spice for good measure!

Easy Mexican Casserole

Fantastic! I did make a few changes right away: 1) mix beef with taco seasoning 2) re-order layers - beef,veggies,chips and lastly cheese. 3) omitted the olives 4)added a dollop of sour cream on top of each serving, after the casserole was cooked. I served it with green salad and tortilla chips as suggested - yum! Next time I will serve with wedges of warm tortilla.. Enjoy!

Chicken Pot Pie IX

Fantastic pot pie, providing you make a few minor adjustments. 1) I've made the recipe as is and it is very bland - cook chicken & veggies in broth, add garlic and onion powder as well as some poultry seasoning. 2) add potato and corn to the filling 3) filling is enough for 2 deep dish pies so make extra sauce and just make 2. This is a foolproof recipe that's quick and easy to make. My toddlers love it and so does my husband!

Scones

I made this recipe exactly as is except I added some cinnamon to the mix and cinnamon sugar on top. They were amazing! I made them for a baby shower and everyone loved them. So much so that the mommy to be woke up a few mornings later craving my scones! I made a faux clotted cream and raspberry preserve to go along with them... Yum!

Raspberry and Almond Shortbread Thumbprints

Simply amazing! I did make some adjustments right away - 1/2 cup instead of 2/3 cup of sugar, smaller dough balls, used the end of a wooden spoon to make the indents (perfect!) and I chilled the cookies for 20 minutes prior to baking, (zero flattening, looked just like in the photo!). The only thing I would do differently next time is to add more jam to the indents part way through baking as the jam does sink. No big deal though, I just ended up topping up the indents after they were done baking. I think if I hadn't made adjustments I'd be giving the recipe 4 stars. The cookies would be too sweet and definitely would have flattened out and not looked nearly as "professional".

Maple-Garlic Marinated Pork Tenderloin

Fantastic marinade! I marinated the pork loin overnight and cooked it in the oven for 55 minutes at 375. Be sure to leave some marinade aside , cooked, as sauce.

Szechwan Shrimp

I prepared this recipe with sticky rice. The szechuan sauce was OK. It was missing something though. Perhaps a little lime juice and more garlic. Also, I used ginger powder but will opt for the fresh stuff next time. Not a bad dish and it was quick and easy to make but, a store bought sauce could have easily achieved the same effect.

Slow Cooker Split Pea Sausage Soup

This soup was disappointingly bland. I had made 2 changes - 8 cups of chicken broth an used smoked ham instead. I doubt if I haven't made changes the result would have been any better. I had to add a lot of spice after to make it even worth eating... I love split pea soup but just not this one.

Sweet and Oh So Spicy Kielbasa

As is the recipe is a 4-4.5/5 but with your own tweaks it could definitely be a 5/5! As far as meat appetizers are concerned, this is a go to recipe for me - much better than cocktail meatballs. My recommendation is to reduce the amount of sauce, make the day before and let simmer in a crockpot for a few hours before serving. Yum!
