Beef and Noodles

I only had ground beef so I browned that and left it in big chunks. I followed the rest of the recipe but did double the stock and I am glad as I actually would still have liked a little more gravy. Hubby liked it, even though he hates peas.

Meatball Sandwich

I loved this meatball recipe. I used 2 eggs and garlic and onion powder to taste, a little salt and pepper and stir brand Italian bread crumbs. I make my own sauce. I also browned the balls before baking for 20 minutes. So good!

Smothered Chicken Breasts

Apple Pie by Grandma Ople

THE BEST APPLE PIE RECIPE!! I have made several recipes and I am always unhappy with how runny the filling is, but this is perfectly gooey every time. I use 5 granny smith and 5 pink lady apples, and I do add 1 tsp cinnamon and 1/4 tsp nutmeg. I also am not great with the lattice crust so I mix the apples with all of the filling and use my regular crust, brush it with milk and sprinkle with about 2 tbls sugar in the raw, baking at 350° the whole time. Even my very picky mother finally admitted it is better than her apple pie ;-)

Kids Favorite Meatloaf

This was just ok. I followed the recipe exactly, using wheat chex and I thought it was too mushy. The ketchup mixture for the top was too ketchupy. I usually use 1/4 cup ketchup, 1 Tbsp mustard and 2 Tbsp brown sugar. I don't think I'll make it again.

Fresh Southern Peach Cobbler

I had never made cobbler before. This was so easy and so delicious! My husband and Mother in law both said it was the best they had ever had. I used about 8 cups of frozen peaches i had let thaw on the counter for a couple hours. I might try fresh peaches next time, or maybe not. Oh i also used 4 tsp cornstarch and the sauce was perfect. Great recipe!

Black Magic Cake

By far the yummiest thing I've ever made! I have tried a few chocolate cake recipes but this my fav. Baked cupcakes for 17 minutes and topped with Butter cream frosting II. FABULOUS

Easy Chicken Enchiladas

The only thing I changed was to add red enchilada sauce and glad I did. These were pretty tasty for my first try at enchiladas. I prepared them last night and put them in the fridge so all I had to do today was pour the sauce on and pop in the oven. I will probably make them again and cut the sour cream a little and add hotter chilis.

Buttermilk Chocolate Cake with Fudge Icing

I made this tonight and it was okay. The only change I made was to add a little extra cocoa and I am glad I did, this cake by itself was not very flavorful. The frosting is very much like hot fudge and together they make an okay cake. I made it into cupcakes and baked for 15 minutes. I poked a hole in the center so some of the icing would get into the cupcake and hopefully add some chocolately flavor. I will probably not make this again.

Country Fried Steak and Milk Gravy

My husband loved this. Be careful of your temp I let my oil get a little too hot and almost burned one which made my brown bits in the pan a little darker than I like for making gravy.

Breaded Pork Chops

Super easy! The first time I made this I wasn't paying attention and mixed the bread crumbs with the flour mixture and it was delicious. The second time I didn't have an egg so I substituted milk and it was super delicious! I did have to turn the heat down to medium because I burned them the first time on med-high. My husband and 5 yr old LOVE these, this has become a regular dinner.

Grandma's Lemon Meringue Pie

I had never made, or for that matter eaten lemon meringue pie before but I made the mistake of asking my father in law what kind of pie he wanted on Christmas. I couldn't say no so I went on a search and found this recipe. The in laws all loved it so I think this recipe is a keeper! Oh, and I even tried a little slice and it was pretty darned tasty.

Original Nestle® Toll House® Chocolate Chip Cookies

I have been making this recipe for years and LOVE it! The trick is to make sure your eggs and margarine are room temperature. Everyone's oven is different, but I bake mine for 8 1/2 minutes, for chewy cookies you have to take them out before they look done or you will end up with a crunchy cookie. People always rave about my cookies and ask for the recipe, the are always shocked when I tell them it's on the back of the chocolate chip bag!

Best Toffee Ever - Super Easy

I have been making this toffee for 15 years since I was a little girl. I cook it just to 285 stirring the whole time. It comes out perfect every time. I made some last night and didn't feel like chopping almonds so I just used some peppermint sprinkles on top. Also I have always used semi sweet chips on top, let the toffee cool for about 5 minutes then sprinkle them on top and let them sit for about 5 minutes. Once the chips are all shiny spread them over the toffee. PERFECT!
